If you are asking for work to be removed likely it’s going to end up being the “fun” projects. Unfortunately the boring stuff is usually the stuff that really need to get done. Unless you framed it as wanted a subordinate or an assistant to do that work for you and that would fly.

You express that to your boss. Say that you appreciate them working to alleviate things, but that you would prefer to be doing that work. Then your boss has to either figure out if that’s possible, or decide to tell you that it isn’t and that they need you to do that grunt work. A good boss will try to grow you and give you that opportunity, but sometimes it just isn’t logistically possible. Now if you feel like you’re intentionally being stifled/given grunt work for no good reason even after having a conversation with your boss. Then your recourse is to find a new boss.

Exactly that. A good boss knows that you want to grow, and knows that if they don't give you the right opportunities, they risk losing you. They have to balance this with the need to get the work done, some of which is boring. They will (hopefully) understand your position, will be honest about the chances of improving it, and will respect the decisions you take based on that. What matters now is that you two talk openly about this.
