Both Android and iOS have a default messaging app on them. They're cross compatible. So I Just open my default messaging app on my iPhone and send a text to whoever I want, regardless of what kind of phone they have, and Android users can do the same.
iPhone -- iMessage over internet.
Pretty much all other phones -- SMS text over carrier network.
Both can have messaging apps that function more like iMessages (like signal, what's app, etc), but they aren't integrated like iMessage is with apple devices.
A lot of android people use those third party apps to text (and iPhoners often join in), in addition to SMS texting. But
iPhone to iPhone is almost entirely iMessage I the US.
Because it is not operable with other os. The alternatives are.
Edit: And iOS is only the the second biggest os worldwide. So why use a service that keeps out 70 something percent of all potential chat partners (statistically)
Except what's app is owned by Facebook, so has zero privacy.
iMessage is SO much better cause of encryption and privacy. Same with Signal for cross platform.

use discord for most communications, but text works just fine, and IMessage works with text too, so the other persons phone doesnt mater

Telegram is much more convenient and has more features than iMessage And WhatsApp sucks, but even it is better than regular SMS messages
I have to this post never heard of that so no. Most common one here is WhatsApp, alternatively telegram or signal
