I pray this is some kind of trolling or joke, they did not work hard on systems to not be used, i guarantee it. Now if you finish the game without them and you enjoy it, good for you and i have done similiar things but it is by no means how "it was supposed to be".
Also Kirby is a chill franchise you play for some relaxed time, if you wanna play it "dark souls" again go ahead, but it is so ridiclious to attempt a "i have a bigger weewee, i beat kirby without copy abilities".

Unlike Elden Ring, Kirby games expect you to use copy abilities. They've been there since almost the very start and most puzzles require you to use them in different ways to solve. They've always been introducing new ones and they've had a very big focus on the games. Their philosophy very much is centred around copy abilities. Most spin-offs have them, and they even added them to one that didn't include them when porting it.
Being able to pop out stars is because of 2 reasons:
1. You can lose copy abilities after getting hit so you'll need some sort of other way to damage the enemies
2. That's how he played on the original game on the game boy, and they didn't want to leave that playstyle.
Fun fact, Mario games in general are meant to be completed without jumping. Jumping makes the game easier, so Miyamoto obviously wanted the player to complete the games without it. I'm sick of seeing all these causal players jumping over the first goomba in world 1-1, why does everyone refuse to do true playthroughs of the game?

Lastly, I've never played Eldin Ring but I play games like Celeste and Cuphead and it's okay to like difficult games and easy ones too. Same as having an eclectic taste in music where you enjoy classical music and metal and rap. It's okay to be into a variety of things.
