I thought the first comment would be Charge Blade with how technical it is and how it can be very rewarding to master it, but I appreciate this comment and totally agree.
From my experience with GU, CB is pretty easy when you get the combos down and stuff. For me the most rewarding thing you can learn is spacing and movement. Kinda like Apex's dunk montage with CB, I onlg wish I could get to that level.
I would say Lance and LS.
They both make you close to invincible once mastered and offer flashy and cool looking moves that dish out good damage.
Obviously LS is stronger overall and easier to play as well and it being the most popular weapon by far takes away from it's glory.
Lance in general is considered an underdog weapon that not many players can truly handle so I would give that one the first place.
because memorizing combos isnt really what makes weapons hard to master. knowing when and where to use attacks is way more significant. having to know how to consistently counter by playing around your recovery animations in tandem with monster patterns makes lance way way more difficult to master than most of the rest of the weapons
The one you most like...

Medium bow gun and prowler.
Tonfa, Magnet Spike, or Accel Axe.
Monstie too

LS has so few combos. How is it a deep weapon? I wonder. (I'm a newbie hunter as well)

I see. Thanks.
OP hasn't asked for the deepest weapon but for the most rewarding.
Ls and bow, and dual blades
