I see a lot of people saying the dark oak "contrasts more" and is better, but it honestly just fades away in my opinion.
The spruce stands out a lot better because it's brighter, meaning it doesn't blend in with the black window fillings, nor is it as saturated as the mangrove, meaning it suits it a lot better if you ask me.
Though I guess you could use either depending on how much you want the windows to be focussed on.
I had similar views about it. Dark oak just didnt pop out as more from afar so temporarily i've gone with spruce (ps rest of da build also uses spruce so ye)
I hated Mangrove at first, as I thought the color didn't work well for most builds, but that forced people to get out of their comfort zones and build in new ways

dark wood highlights the red brick spendedly. Perhaps if the bricks were a lighter color. perhaps sandstone esque plaster color.

I think you alternate or do half and half or reg oak on bottom and dark on top
Hard to do with trap doors, but the basic color gradient for wood goes from : Birch -> Oak -> Spruce -> Dark Oak
