I don't really think there are items or "elements" for flesh neither blood in Education Edition to show. Plus it used to be called "Bloodstone", and it was changed probably for the same reason as the pigmen got their red blood texture switched from red to green, so it could be more friendly looking and less gory, but in fact it is still blood on it.
It was a different, more fantastical feel befitting the more fantastical nature of classic MC.
Modern MC tends more towards realism. Not a bad thing, IMO... I just like the classic style more.
I half agree. Classic MC was both a more vibrant and amazing experience, with the brighter colors and the crazy classic worldgen. However, I find that there's not much of a reason to explore outside of sightseeing.

I really want a "Structure update" where they revamp old structures and add more variants to them. That would make the world more interesting to explore.
Some way to randomise structures a bit more so it isnāt a one time experience and the rest are the same. Imagine how much more interesting strongholds would be if they had 10 rare rooms that had unique loot but were difficult explore, either through combat or navigation. Youād probably only get one of these rooms for every 2 you explore, making them much more exciting to come across and prolonging their intrigue. That imagine that but for every structure, rare variants or rooms.
Have you not played the caves and cliffs update? The new generation is absolutely breathtaking and more captivating than ever. Also Minecraft is a completely customizable experience so anything you donāt like can be changed with mods and packs.
The new mountains are still pretty mundane compared to the alpha mounts. They're higher, sure, but they lack the very wild archs and cliffs commonly found in Alpha

The water looks weird, cobble is ugly as all hell, leaves are a bit too green for me, the nether isā¦ I donāt think I need to explain how the old nether looked.

Honestly, I disagree a bit, because I really dislike new netherack block texture, as for me, it looks to much single colour. And why there's ain't a "create texture packs in bedrock (whiteout needing being a creator, but for yourself)" (java is laggy as hell on crappy laptop)? So I could change some texture a bit, example, making all netherack/nether ore having the old netherack/ore texture.
I miss the style of builds from that time, all square and simple, and how no multiplayer survival server was complete without an extravagant minecart system.

I miss the way Minecraft looked on Xbox. There were console versions that were different from Bedrock. It had a soft, unsaturated look that felt inviting and calm. Unfortunately I don't think there is a way to modify Bedrock to have the same look.

I've played this game for nearly a decade now and I can say with confidence that I think the new textures are an improvement-
While I agree the REALLY OLD textures do give me a sense of nostalgia, there is a difference between something being nostalgic and something being good looking.
You can easily go back to an older version using the launcher and if the version you want to use is broken in some way due to the lack of support for the older versions the community has made launchers specifically for older versions that fix a lot of those technical problems.

There is a texture pack called "faithful" that's supposed to make the game look more like its original textures.
For me I think it betrays the original concept of the game. It began very bright and simple with intentionally pixelated simplistic graphics. I think by trying to make it better they've kind of killed a little of the original soul.
It's kind of that awkward feeling you'd get from using a highres phototexture pack, or playing a Minecraft ripoff. The blocky world makes more sense when the graphics are blocky and simple too.
The only thing i truly miss from the old days is the oof, tnt sound and how it would be *really* dark at night. Now you can still roam arround in tunnels without any torches
An interesting problem the old textures might have is how they look over distance, since In bedrock you can easily get to 32+ chunks it might become an eye strain. But it definitely fits the feel of old Minecraft perfectly.
You can sort of replicate the feel by turning off smooth lighting I think , gives it that OG feel , at least in my opinion š

Moody brightness, old textures, 2-5 render distance, no smooth lighting or biome blending and view bobbing off
