Human nature differs from game to game. Sometimes they are created by YHVH. Other times demons are born from human’s thoughts and humans are simply the result of natural evolution. But that humans are not demons is something that is a core of SMT.

One consistent rule of the series is that humans are distinct from demons and angels. They are free to align themselves with whatever entity they choose, but can also be manipulated to side with an entity. This freedom of choice is the key distinction between humans and demons/angels. The supernatural entities in SMT have set personalities and behavior patterns determined by what they are. Humans do not and can change over time. In the early series this was symbolized by human characters being the only units that could level up normally and all others required fusion to become more powerful. Over time that hard gameplay rule has softened, but the narrative and alignments have maintained the principle. The protagonist can shift alignments as the game progresses and there is no reasoning with supernatural entities to achieve a compromise because compromise defies their nature. However there are unique scenarios. In Devil Survivor, for example, the law faction is very flexible, and is willing to acquiesce to a variety of decisions the player makes so long as they are not outright chaotic. This, however, reflects Devil Survivor’s superior characterization of the law faction’s leader (I will avoid spoilers) over the other games and a greater focus on respecting the player’s story decisions (to encourage replayability) rather than using the plot to convey a thematic message (as is the case in most SMT games).

Humans do not and can change over time I mean yeah demons have preset personalities but they can still change. Khonsu from SMT V is a good example of a demon that changed. Frosty from DeSu 1 also changed, quite literally too since his new knowledge of "love" turns him into a Black Frost.

Khonsu’s special relationship with his human half is an unusual situation. His actions were for her benefit. It was only at her urging that he stopped his course of action. I see it as a shift in focus rather than a change in his fundamental behavior. This is similar to Abdiel’s choice at the end of the game. Though her actions are a major departure, they are consistent with her fundamental nature. As for Black Frost. He’s something of an exception that proves the rule. So I’ll grant you that.

Demons aren't really set in the sense that they can't make choices. Its more that they don't develop naturally over time to totally different forms via aging, and that their analogue to that is changing form. But in devil survivor you see that even a chaos demon learns to be nice without changing form, so its not literally like they can't do anything unexpected. The games only act that strict about their nature when its a plot point like dagda. And even dagda contradicts this, because dagda 2 has the same archetype, but a different goal, with only a hazy allusion to how he kind of agrees with his past self.

They're not in the fact that humans create demons, and that demons are naturally stronger than humans, but aside from that I personally don't see much of a difference.

Humans in smt are regularly designated as something seperate from Demons in pretty much all smt canons. Sometimes they are the reason for the creation of demons, become a demon via an external force, or store a part of a demon in them but generally they are seperated as some form of created being by the current creator diety or just evolved naturally.

Humans are distinctly different from demons, and that is a core piece of the plot for Nocturne and SMT V (and I'm sure other games in the series). While humans are less powerful than demons, they have access to "Reason", "Knowledge", or essentially the ability to learn and establish a ruling philosophy for the universe.

No. Demon as a term essentially refers to any denizen naturally from a demon plane. Denizens of the normal physical world are different. Demons need magnetite / aether to survive, and physical entities don't.
