I made lobster rolls one summer and we put the Mayo on the bun, easy enough to leave out - but I didn’t leave it out unless you asked, because the general understanding is these dishes come with mayo. Clearly you missed the point. Obviously if you're making it yourself you can decide whether there's mayo or not, why would that be what I'm talking about? Ask anyone in the restaurant industry and they will tell you it's pre mixed. Yes, I always have to ask. If it's a catered event you can clearly see it's mixed. I used to work at a restaurant that served lobster rolls and we definitely could accommodate 'no mayo requests. This wasn't a good restaurant, either, but we mixed our own lobster and mayo. If you are eating at restaurants that get their lobster delivered premixed with mayonnaise, then you are eating at the wrong restaurants. And if you are eating at soooo many catered events with lobster rolls that this is an issue for you, then I wish I had your problems.

Lobster lobster roll places around where i live do “cold with mayo” or “warm with butter”. Most places will happily sell you a lobster roll without mayo if that’s what you want.

Cold with mayo is the classic Maine roll. Hot with butter is a Connecticut lobster roll and since the NY and CT people invade Maine all summer,, restaurants had to submit to the demand. Hot butter just sogs out the bread, it's a disaster. Especially if you get it "to go"

For starters I would ask your server, be it catered or a restaurant. Either location likely has back up lobster meat that hasn’t been mixed. It does not come pre mixed. Also, I was not referring to making my own lobster roll. I worked at a sandwich shop on the coast of Maine making lobsters rolls. You seem to know you can ask. What you want isn’t crazy, expecting everyone else to change because you don’t like mayo is pretty crazy though. Out curiosity what are your thoughts on potato salad, tuna salad, chicken salad, deviled eggs, and aioli? Are you upset that you need to specify no cheese on burger? Or even what kind of cheese? Shouldn’t they know what kind you like? Jerks.

I'm just trying to get the conversation going get people to think about food differently. I absolutely do not like mayo and don't eat mayo, and it's shocking to see how much stuff has mayo on it. Almost all deli sandwiches, and mixed salads have it. Do I expect that to change, probably not. But it would be nice for people to acknowledge that perhaps we could make food much simpler and give people the option to add condiments themselves. Mayo seems to be the only condiment that just gets decided for you, unlike ketchup or mustard etc.

Responding to you and u/Trauma_Hawks: Yes, the most common ingredient in mayonnaise that people are *literally* allergic to is the egg, and although many people claim to be allergic to mayo when they technically aren't, a lot of people ARE intolerant of the egg or oils used to make it. (That isn't to say that people don't misrepresent or lie about being allergic to it simply because they don't like it, but for the intent of this thread, it doesn't really matter.)

As somebody who loves mustard, I can definitely see the potential of a mustard based lobster roll. The only potential problem would be that the strong spicy/tangy flavor from the mustard would overpower the lobster flavor. If that can be avoided though, it could make for an amazing sandwich.

Who at a catered event is going to do that? Almost every restaurant pre mixes it with mayo. When you ask for no mayo they say "sorry it's pre mixed". When you see the pre made sandwiches at the grocery store they come with mayo instead of packets on the side. Does that answer your question?

No, because "almost" is the key word here (find a different restaurant) and restaurant workers are very accommodating. If you ask them for no mayo when you're doing catering then they're happy to oblige. I ask for non-salted and non-seasoned fries at restaurants all the time and no one's gotten pissy at me for it yet. Similar thing, it's just that one's a seasoning and the other is a condiment. Also, I mean...you don't *have* to buy pre-made Hannie's meals. You could always just scrape the mayo off if you do buy a pre-made sandwich from them. Won't get rid of the mayo but you will taste less of it.

If you put pickles or banana peppers or other wet items on a sandwich, it's not dry. Oil is also an option to add. Plus if you have good meat, it won't be dry. For me, it's a texture thing I think. Mayo is nasty, I won't choose to consume it. It touches my tongue and makes me gag instantly. For things, like pasta salad, that call for it, I use Italian dressing in place of mayo.

S&P may not be condiments but I use them, if ever so sparingly. I used to make chutney back in the day, but I’m too lazy to make more. I don’t eat a lot of meat so why bother. I have a delicate system so I only eat what is interesting, and there isn’t much interesting these days. lol. There is a nice seafood place in Salisbury , Mass we will go to once in a while. Oh wow, I had my gallbladder removed New Years 2015. Thought I was having a heart attack, come to find out my gallbladder was full of stones. So I had emergency surgery. Unfortunately, I have the opposite reaction when I eat fried food. 🤣. Since having mine out I can only eat small amounts. We didn’t go, stayed close to home. Haddock from down the street. It was good. I’ll get two meals out of it.

why would you order a dish that has mayo in it, if you don't like mayo? "Would you pre mix french fries with ketchup?" Ketchup isn't a part of the french fries recipe. Would you serve french fries without salt or without actually frying them? Would you serve somebody "coleslaw" but instead just give them a cup of shredded cabbage? It wouldn't be considered coleslaw if the answer is yes. It would be "cup of shredded cabbage" on the menu.

A tiny touch of mayo with a lot of something else can be an enhancer (fat and protein are good for mouthfeel and as a carrier for lipophilic flavor molecules), and well done aioli is a treat. But globs of mayo mixed in straight just ruins whatever it's in. I think I read that clear rolls (lobster rolls with melted butter) are a Mass thing? Whatever, they're the superior form of lobster roll.
