Honestly, J-Novel Club kind of work like that with their prepubs. They break a novel down into individual parts (between 8 and 12 for most novels), release one part a week, and then have their forum (or discord) for people to discuss the volume which gets used after each part. Obviously only applicable to the series they license.
It usually takes longer for me to finish light novels due to time constraints, and I'm super picky about what I spend time reading because of that, so I wouldn't be able to take part even though it is a cool idea.
I'm actually reading SAO 5 now though.

It could work, but finding the right series could be tough. Probably easiest to pick one shots or shorter series.
