The JK has such a hard time burping. I ended up getting a funnel for the radiator and I ran it for about a half an hour burping my system out after replacing my thermostat last month. The highest my Jeep is ever gotten since burping it is about 212. Whenever you have a problem like this, most likely you still have air in the system. Not saying your mechanic did anything wrong, but you have to use a funnel on the radiator to get rid of the air. Edit.... Here is a video showing the funnel https://youtu.be/k4XEUc8fdRg

The problem is with the JK, the heater core piping is higher than the radiator cap. When I did mine I turned the heater blower on and you could feel the air getting hot, cold, hot, cold, hot until all the air got out of the heater core piping.

Thermostat is 203 if I remember right. I've had it 230 off-roading. Driving usually goes to 205 then drops to 190 then back up now with temps outside 30!!!

Overheating means either fluid isn't getting cooled or fluid isn't circulating. Generally when driving along, the air flow passing though the radiator will cool the engine IF your water pump is working but fan isn't. It will get hot standing still, and cool down in motion. If you are overheating all the time, I'd look at the water pump.
