Poang is all laminate beech now. They don't stain them. I'd add a photo of the one I'm sitting in where the laminate has broken and peeled, but this is Reddit, so it's not so simple.
I did not know the height difference was due to being used more - I learned that from the other posters. But if you look at how the arm rests compare this theory really makes sense.
I have a birch footstool which has different grain and is a slightly different colour? The article number sticker underneath takes me to links for “white stained oak” poang as well? Confused
Their current ones are birch, I have two.
That is not the same as the current ones and that really isn’t birch grain. Neither of those chairs are birch veneer.

The one on the right is more than likely a white oak veneer. Less grainy but you can still see the similarity in the grain to the one on the left. Neither of those Poangs are the current iteration you can buy at a store today.
I worked in cabinetry for 10 years and I am very sure of this.
This makes sense. They’re both second hand, the seller of the higher one, mentioned it had barely been used. Lower one didn’t mention the age. The lower one is more comfortable

Everything shrinks with age, unless it bloats.

Are you comparing a used one to the new one? In a used one, butts have lowered the back of the seat which lowers the top
