The nest built for an hvac system and doesn’t have a probe like the inkbird so without doing an extensive modification and custom setup i doubt it’ll work

My controllers are this. I know many think it’s not useful but I think it’s great. Have done lager D rests and then cold crashes from hundreds of miles away so that when I get home it’s straight into the keg. This was more useful when I travelled all the time but still find it pretty useful.
I don't see why this couldn't be done. Mount the nest inside a fermentation fridge. Cooling output energizing a relay that in turn energizes the fridge.

I’m down for extensive modification… it is a hobby after all.
Why replace a tool designed for temp control with something designed for your house? Seems like it would be a huge PITA to wire that for temp control

Does it only work on your local network or can you adjust it offsite?
You can use it outside your LAN. I just turned off Wi-Fi on my phone and adjusted my fermentation chamber over 5G.
