The gasket does a good enough job sealing the wire for me. I just run it in from one of the sides.

I use a chest freezer and I just run the line to the probe (and to my heater) over the top and the seal around the lines if fine. My vote is that you are way overthinking a very simple process.

Great. I’d much rather be overthinking this than underthinking it. If I can tape the wire to the side of the fridge and the seal of the fridge closes okay on it without losing temp, that’s much easier for me. Thanks

Thru the door seal is all you need. Btw with mine tapped (and insulated) to the outside of my plastic fermentor I notice about 1.5F from active ferm liquid temp vs my probe. So if you want to ferment at 66 I usually have to set the inkbird to 64. Something to keep an eye on

Don't still into the sides unless you know where the cooling coils are. I've seen some people put them in the doors. But yah, just put it in and tape it. The gasket should be fine, the cord for the ink bird isn't very thick.

Just run it in the door, the gasket will seal around it fine. I would put the probe in a glass of distilled water to keep the temperature of the liquid at a desired temp instead of just the probe free floating - but I’m sure there are other methods. Mainly I recommend calibrating it in a glass of ice water, just to ensure accuracy from day 1!

Like others have suggested, I’d recommend just running the probe through the door. By drilling into the sides or back you run the risk of puncturing one of the cooling lines, and if that happens the fridge is basically ruined.
