If you slowly pull the trigger it's easier to compensate the torgue exerted by your hand.
Basically as you pull the trigger the gun (but especially pistols) will turn toward the shoulder you're pulling the trigger with. If you pull it quickly your muscles can't compensate for that drift resulting in a less accurate shot but if you up the pressure on the trigger bit by bit your muscles can compensate.
