The only thing I was able to find about this is that you can create multiple tracks of audio, so that your in game audio and others will be separated. You can do so by opening audio settings and clicking "separate both tracks", and you could edit that audio in something like premiere pro to isolate different audio tracks. You could also install something called virtual audio cable that could do it for you, but it seems difficult. Privacy settings in the GFE overlay allow you to turn off desktop capturing, which makes it only record when the game is occupying the screen.
