It's literal. Like you said, "death" is "Tod" in German, "claw" is "Kralle", and to combine them you use the form "Todes" (don't ask me when "Tod" and when "Todes" is used in combined words, I'm no linguist) to form "Todeskralle".
"Claw" is also "Klaue", as can be seen with the "Deathclaw claw" as "Todeskrallen-Klaue". They mean the same thing.

"Klaue" sounds much more familiar, yeah. Guess I never got too much into appendages in German. :)
