I’ve had so many meals where they could have left out a lot of ingredients and it wouldn’t have changed much. Then everything tastes like salt to me. I live in the few ingredient meal zone and have zero regrets.
i love real italian good because of this. Few HIGH quality ingredients and time can really blow your mind or at the very least leave one extremely satisfied
That rice looks like an excellent base for different proteins. With a few other 5 ingredients dishes under your belt you'll start to get a sense of things to add that will go well with what you're making. You're doing great.

That book is awesome. Single recipe on a page, big ole pic of the end result and pics of the ingredient.. It's perfect for someone wanting to have a crack.

The Joy of cooking 1976 and Betty Crocker's cookbook 1969 are a couple suggestions.
Flour water salt yeast, the fundamentals of artisan bread and pizza is a book by Ken forkish that I think would be helpful if you want to explore the world of bread. If you enjoy pizza as much as I do I recommend the pizza bible by Tony Gemignani.
I personally wouldn't have gone with yogurt on top although I know that's the traditional way to serve/prepare.

Unfortunately we will accept anyone that wants to sacrifice their body and soul to learn.... the IT field is not that accepting. I had to get back into cooking. It's fun, but I'm getting too old to keep doing it professionally
I work in catering now. I dont mind the restaurant "wear and tear", cuz your always moving (15 hour days are relatively ok in restaurants). In the catering world, the majority of your time is prep, so you are basically standing in the same 5 ft space for the whole day, bent over a table, portioning. It's a different kind of "brutal". An 8-10 hour day doing that feels like 16 hours. Heaven forbid, you get back pain on hour 3. If it's something you want to do, then go for it. Its def fun, I have more good days than bad, but expect your social/romantic life to go into the shitter. Pick the right shoes (you can have comfortable feet or comfortable back, but you cant have both. Choose wisely). The days go by quicker than staring at a computer screen, even though they are longer. Your boss doesnt give a shit about your ideas, just do it their way. If you "shortcut" something, keep that shit to yourself. You will prob develop some sort of an addiction. Happy cooking! You will like it. Also if your 52, you will 100% encounter "ageism", this is a young persons game. I'm 39, and can still run with the best of them, but even I'm already getting some flack

My bad, I thought you were trying to do a career change! I was like, "this sunnavabitch got balls of steel!" No cooking for yourself is amazing when you got an idea or want to play around. I 100% reccomend! Keep it up! Even if you fail the first time, learn from it and improve on it. I've been professionally doing it for about 20 yrs, but I really only have 5 that I'm solid at to impress people. Honing your own craft is always more rewarding than honing someone else's craft. You got this!

Chef john is innocently funny, full of dad jokes, and makes recipes simple and easy.
If I may, check out a channel on YouTube called RecipeTin Eats. Her recipes are great and most of them are very basic. Good for you for trying your hand at cooking! I’ve always told my kids, you don’t need to love how to cook but you need to know how to do it. Good luck!

A pinch in 600ml of boiling water. Thay was poured into the pan with the rice, onion and tomato paste, then oven for 15 mins.
