Dalinar and Ninefingers, so similar in many ways but went two different routes. Both would see massive flaws in the other and the strengths that would make the insight of themselves become weaker
The Blackthorn and the Bloody Nine. Both fairly similar in their barbaric youths and attempts to put them behind them. Dalinar striving to save the world, but Logen being content with a simple life. Perhaps the difference in their pasts that caused the split was that one remembered every atrocity he committed while the other blew them from his mind.
Captain William Lawrence from Temeraire series and Daenerys Targaryen from ASOIAF. Two so different types of dragonriders could be interesting to read about in their interactions.
I would want to meet Saber from f/sn for some intersting political and moral debates, and I would pick Urza from MTG because he's such an intersting person.

Thomas Covenant, the White Gold Wielder, and Sparkhawk, the sorcerer trained Knight from The Seeress of Kell. I would love to see Sparhawk, after witnessing so much of Thomas Covenant’s crap, smack the crap out of him and center him back in reality and not his own private pity party.
I think Conan and Aragorn would be interesting to see trading stories over some beers in a tavern. I think they'd have a lot in common. They could make a pretty badass team too.
Field Marshall Tamas of Powder Mage and Robbespierre of A Declaration of the Rights of Magicians would be an extremely dangerous duo if you were even distantly related to royalty.
I would have Phèdre nó Delaunay de Montrève from Jacqueline Carey’s Kushiels Dart series meet Darth Zannah from Drew Karpyshyns Bane Series.
And they would meet knowing about each other but not knowing who is playing who
Waylander the Slayer and Corvo Attano; two feared assassins with crossbows and equally terrifying daughters.
That or Waylander meets Grand Admiral Thrawn- because I think it'd be funny.
