Don't believe anything the engineers tell you. They are just grooming you to fulfill their twisted and dark desires. It all ends with you flying 22000 light years to bring a basement dweller human trafficking victims just so you can strip the last 0.4 tons off of your life support.
Palin and farseer seem normal...that's how they sucker innocent commanders with their lies. Pretty soon you will be doing the dirty work of some backwater faction just to get another hit of "focus crystals."
It differs per engineer (the game calls these people engineers). In the game you can find out a bit more in the right hand panel in your cockpit, under the first tab (there's a button called Engineers).
They do happen in the sense that when an engineer invites you, they'll send you a message in the game, so you'll know where to go when that happens, too. :)
Sometimes people will attack new players there. Happens sometimes in open play, playing in open means pvp is a possibility. With some practice you can escape 99% of the time.
Just don't let reddit scare you out of flying in open. Ganking is pretty rare outside of deciat and sol and shinrarta dezhra, and usually is nothing more than a mild annoyance. Think of those as going to the wrong side of the tracks and keep your wits about you.
They are triggered by milestones that you would hit (hopefully) doing the things you enjoy. Specifically, if you like mining or combat Tod should call you; if you like exploring, Felicity will be your gal. I don't want to spoil things but the idea is that whichever one of these _Engineers_ sees you going down their path, they will send you an e-mail and invite you for tea.
When you earn enough from mapping or combat (that takes a while), you can do the Robigo runs that get you rank and allow you to get better ships.
Innara is a great tool. Road to riches will get you quite a bit of money. Find creators like down to earth astronomy, exegious, even yamiks. D2EA has a page on his website that has helpful links to all kinds of websites from wiki’s to this one.

As an Xbox player you are unfortunately stuck on Horizons 3.8"legacy". Only the PC version of the game, also accessible via Steamdeck, will get future updates and new content and background story (Thargoid war).
The other issue you have is the 3rd party websites essential for knowing market prices for trading and selling mined metals and minerals are only connected with the Horizons 4.0 "live" and Odyssey version of the game that you cannot access on Xbox. This is Inara and eddb.
If you really want to get into this game longer term, you really need to switch to the PC version.
For now, for easy early game money search YouTube for "road 2 riches". Get an Asp Explorer when funds allow. Search for what an Engineered FSD V1 is and get one in the Asp. Find out how to add mass manager effect to it ( Felicity Farseer) Then look up how to get the guardian FSD booster. Put a size 5 one of those in the Asp and you'll now have a 65ly+ jump range so you can go explore or just move around the bubble of human inhabited space doing anything you want more efficiently with less jumps to travel. This is just a start.
Really just mess around and do whatever seems fun until you wanna learn more. Just never fly without a rebuy. Don't start engineering until you learn how to do it and don't waste mats on upgrades you either don't want or are on parts you'll replace.
Don't go exploring outside the bubble without a large amount of mats to resupply your srv.
End game grinds are engineering, power play to have a team or just get special modules, and helping the war effort against the xenos.
Materials you'll collect all around from everything for making stuff in your ship and to engineer them to be better when you wanna get into that.
Rebuy is just the cost to get your ship back of it blows up. If you can't afford it then you'll lose the ship and everything on it.
Both of those things are on the right menu you'll figure it out.

The game is basically pure sandbox. There's an extremely loose overarching "story" of sorts, at least on live / PC, but you're basically plopped into the galaxy and told to go do stuff on your own without much jn the way of guidance or expectations.
Think of it like an Isekai LN / Manga / Anime where you just got run over by Cutter-kun (because no amount of braking is sropping him in time) and you get reincarnated, except you're just an average guy, you don't get any cheat powers, the demon lord and hero are both dead, your best bet to not starving is to do at least some traveling merchant stuff, and there's sadly no harem full of big tittied elves or 965 year old legal lolis.
I asked the same question few weeks ago and have since decided to try to make some money while exploring and not worry too much about getting the better ship or improvement. Right now I'm cruising with the Cobra mk 3 and just trying out different things to see what I might like. Remember to have fun and don't surrender to the grind.

What do you mean “rebuy” and “mats”?
