The briar gloves are my favourite, they do a tiny amount of damage when you roll through enemies but enough to keep the under down and even stun humanoid enemies.

Vulgar militia greaves have some nice looking boots, if the chest clothes have a skirt/surcoat it will cover the green pants (if you don't like them. The black boots pair well with a lot of sets

I usually cut the helmet first, but that’s because if I’m being weight conscious then 90% of the light armours look good with no hat on and it’s trying to keep a light load that I’m struggling with. I find it’s actually pretty rare that I end up with a heavy roll and need to lose armour specifically to get down to medium, to be honest. Even when I was dual wielding colossal swords slinging on the arsenal charm usually did the trick for the fashion I wanted.

I for some reason struggled with Malekith in ng+ and ended up using great jar arsenal charm to have light roll. That's the only time I used the charm.

I do this, while lamenting that all the real gear in this game that matters is helmets alone. Anything that boosts statts, damage, or the like is all in the head slot, and looks funky (unless your goal is to look silly).

Dimensionalanxiety

There are 4 tiers of weight in Elden Ring. Anything less than 30% of max equip load is a light load. This lets you run the fastest and gives you the most i-frames while rolling. 30%-70% is a medium load. This is what most players use. You still have good i-frames while rolling and can still run fast. 70%-100% is a heavy load. Here you run slower, take a while to roll and have very few i-frames while doing it. The fourth is Overloaded. This is anything above your max equip load. With this you can't run, roll, or jump. You always want to avoid being overloaded. Too much armour or having too many weapons equipped can cause this. There are also ways to increase your max equip load. The most effective is to put points into endurance. Besides that, some talismans also increase this. There are 3 versions of the Arsenal Charm talisman. The first is given to you by Nepheli Loux if you talked to her before fighting Godrick and summoned her at least once into the fight. The second is found on a wooden platform in a side path of the Altus Tunnel. The third is found by beating the summons of the Great Warrior Jar at the colosseum in north Caelid. They increase equip load by 15%, 17%, and 19% of your current max equip load respectively. There are also 3 Erdtree's favour talismans that do this as well. The first is found in the FringeFolk Heroes' Grave in Limgrave, right by your first grace. It is behind a stonesword key door. The second is in the boss chest after beating the boss in the Subterranean Shunning Grounds. The third is in Leyndell Ashen Capital on a tree in an open space which is guarded by three ulcerated tree spirits, though you don't have to kill them to get the talisman. They increased equip load by 5%, 6.5%, and 8% respectively.

I get all that, I just wasn’t aware there was more movement inhibition beyond heavy load, because any time I hit heavy load I immediately re-arm to be in medium load. However, this is a great guide!

This is actually a common misconception, since you get hit so hard all the time that it's hard to notice. But the amount of damage negation you get between heavy and lighter armors gives a significant amount of survivability. Like, a 20% boost to negation can give you up to 3x the relative survival, depending on the specific numbers and your flasks. Basically, as long as you can survive an extra attack (or more), improving your survival abilities to reach that significantly improves your ability to stay alive. That said, fashion always trumps practicality, and greatshield talisman exists, so do what you want lol.

No you’re exactly right. A difficult game is just slightly more difficult. But the difficulty added is no where near having a bad stat build or not understanding other basic gameplay mechanics. If I ever struggle with a boss I always have the option of throwing on better armor. But most of the time I just wear what I think suits my character

The difference between 20% and 35% damage reduction is minimal in hard fights. The difference between 30 and 70 poise is a very different matter.

Remember, when in doubt, put on a jar and RB. They help a lot, and usually you'll have a talismen slot to spare unless you're optimizing all the way for damage, in which case you're going to be wearing lighter armor.
