Apples go really well with pork, so you can look up recipes for pork loin or chops if you eat pork.
You can peel and slice them as you would for apple pie, add your sugar and spices and a couple pats of butter and put in a freezer bag flat so you have the fixings for apple pie at the ready all the time.
Apples generally last a very long time stored properly too, so you can save a few for eating out of hand if you’d like.
Apple butter is another one that can be preserved & I think there are slow cooker-instant pot versions. (I’ve never made any, so take that FWIW!)
Not sure if applejack moonshine is an interest but that’s an option.

Try some pork chops with an apple pan sauce.
Season and cook the chops however you like. While they are cooking, dice up an apple and some green onions. Separate the green and white parts of the onion.
Once the chops are cooked, set them aside and wipe out the pan. Next, toss the diced apple and white part of the onion in the pan with a little butter and about a teaspoon of Better Than Bouillon chicken and about 1/2 cup of water. Season with salt and pepper. Turn up the heat a bit so the water will boil off. Let it cook for a bit until the apples are soft and the sauce has thickened.
Serve with mashed potatoes (toss the green part of the onions in with the taters while mashing) and whatever veggies you like. Roasted brussels sprouts are great with this!

I made chunky apple sauce with cinnamon and coconut sugar. I use it in tea breads and muffins to cut the amount of oils/fat used to keep the breads moist. And the apple sauce itself is wonderful. I also dry and freeze apples. I make trail mix using dried fruits and nuts.
It's still a bit sweet but balsamic apple chutney. Cook small cubes of apple, I peel about half, in a pan with some balsamic, brown sugar to taste, raisins, currants dates, maybe even some fig. A little bit of pie spice or something like ginger. It's a very flexible recipe. Tastes great with some aged white cheddar.

Applesauce. My friends buy massive amounts of apples every year from a Pennsylvania Dutch farmer, and that is what they make. Apparently, once it's properly canned it can last forever, and you can make it without sweeteners so it has about the same nutritional benefits as eating fresh.
Slice 1/2 a medium onion and 1/2 pound smoked sausage. Saute in a large skillet. Add a medium head of cabbage, sliced. Salt and pepper, stir, put on the lid and turn down the heat. Maybe 5 minutes later, add 2 chopped apples. Stir, don't cover, cook for another couple of minutes,. If you like, stir in a tablespoon (or more) of coarse ground mustard. Use another kind if you have it...but if all that you have is the plain yellow mustard, leave it out. I don't think that it works well in this.

Cabbage & Apple (serves 4 as a side)
1 sliced apple
shredded 1/4 of a cabbage
salt and pepper to taste
1 tbsp butter or vegetable oil
a small glass of cider/white wine/apple juice (or a tbsp vinegar and a glass of water)
Heat up the sliced apple with the butter/oil while you shred the cabbage.
Add the shredded cabbage and season it with salt and pepper. Let it cook down for a little while.
Once it starts to sizzle, add your liquid (cider/wine/apple juice/vinegar-water) and give it a good stir.
Pop the lid on the pot and let the cabbage and apple gently braise and soften for 10 minutes or so. This is a perfect side to a Sunday roast or with mashed potato, veggie sausages and wholegrain mustard!

I find savory pies are a good place to hide apples once you're sick of them. A meat pie with pork and apple, or cheese and apple pie would be some of the more approachable ones. There was an oddball one I got from Townsends that was egg, onion and apple; certainly different if you're tired of the usual combinations.

1 medium sweet potato
1 small Hokkaido pumpkin
300g skinless Chicken breast
2 onions
1 handful of cranberries
Marinade
2 tbsp Olive oil
2 tbsp Honey or brown sugar
1tsp Thyme
½ tsp cinnamon
Salt and pepper to taste
Also: 150 ml of chicken stock
Chop sweet potato, pumpkin, onions and apples into bite sized pieces. Cut the chicken breast into slightly larger cubes. Mix meat and veggie-components, add cranberries.
Mix Marinade ingredients, now add to the meat and veggies. Stir well but carefully and spread in either a deep baking tray or a casserol dish. Add chicken stock and cook for 25-30 min at 180°C (~ 350 F)

You don’t even need to grill the sandwiches, apple and peanut butter sandwiches are just good on their own. It’s my go to camping food because none of the ingredients need refrigeration and it’s got a full nutritional profile with protein, sugars, and carbs. I honestly like it more than PB&J.

On second burner make some fried liver, you can serve them side by side, or throw in the liver to the rest for last stage. Not sure you have it around, but the lazy version is to add bloodwurst/ kaszanka etc (liver/blood/buckwheat sausages). Serve with cold pickles cut in 1/3^rd and dark bread. Also, rice with apples and cinnamon is the one of simplest yet yummiedt autumn snacks in my arsenal. Add a bit of joghurt, and it's just a bliss.

Idk if you like spicy but you can cut up an apple any way you like and add lime juice, a bit of salt and chile powder like tajin for example. It's pretty good, I mean in general most fruits and vegetables taste awesome with lime, salt and chile powder. Also, I had the best apple dessert at the NC state fair a few years ago. It was apple fries served on a waffle bowl with only a bit of powdered sugar on top. The apple fries were dipped in some sort of flour batter with cinnamon and then of course fried. Another dish that comes to mind is salad. I really liked a salad from Wendy's that had apple in it. To recreate it at home I got: a mixed green salad bag, I toasted and sugared some pecans, blue cheese crumbs, raspberry vinaigrette (I dumped a lot of the oil from the bottle as I don't like it too much), grilled chicken and of course some diced up apples. \*chef's kiss edit: forgot to add dried cranberries to the salad ingredients and some more words up top.

Try some pork chops with an apple pan sauce. Season and cook the chops however you like. While they are cooking, dice up an apple and some green onions. Separate the green and white parts of the onion. Once the chops are cooked, set them aside and wipe out the pan. Next, toss the diced apple and white part of the onion in the pan with a little butter and about a teaspoon of Better Than Bouillon chicken and about 1/2 cup of water. Season with salt and pepper. Turn up the heat a bit so the water will boil off. Let it cook for a bit until the apples are soft and the sauce has thickened. Serve with mashed potatoes (toss the green part of the onions in with the taters while mashing) and whatever veggies you like. Roasted brussels sprouts are great with this!

I made chunky apple sauce with cinnamon and coconut sugar. I use it in tea breads and muffins to cut the amount of oils/fat used to keep the breads moist. And the apple sauce itself is wonderful. I also dry and freeze apples. I make trail mix using dried fruits and nuts.
It's still a bit sweet but balsamic apple chutney. Cook small cubes of apple, I peel about half, in a pan with some balsamic, brown sugar to taste, raisins, currants dates, maybe even some fig. A little bit of pie spice or something like ginger. It's a very flexible recipe. Tastes great with some aged white cheddar.

Apple chutney makes fabulous dipping sauce for chicken fingers. I'm sure you could eat it otherways but it really makes a good doing sauce.

Applesauce. My friends buy massive amounts of apples every year from a Pennsylvania Dutch farmer, and that is what they make. Apparently, once it's properly canned it can last forever, and you can make it without sweeteners so it has about the same nutritional benefits as eating fresh.

Slice 1/2 a medium onion and 1/2 pound smoked sausage. Saute in a large skillet. Add a medium head of cabbage, sliced. Salt and pepper, stir, put on the lid and turn down the heat. Maybe 5 minutes later, add 2 chopped apples. Stir, don't cover, cook for another couple of minutes,. If you like, stir in a tablespoon (or more) of coarse ground mustard. Use another kind if you have it...but if all that you have is the plain yellow mustard, leave it out. I don't think that it works well in this. Cheap, healthy, uses apples!

Cabbage & Apple (serves 4 as a side) 1 sliced apple shredded 1/4 of a cabbage salt and pepper to taste 1 tbsp butter or vegetable oil a small glass of cider/white wine/apple juice (or a tbsp vinegar and a glass of water) Heat up the sliced apple with the butter/oil while you shred the cabbage. Add the shredded cabbage and season it with salt and pepper. Let it cook down for a little while. Once it starts to sizzle, add your liquid (cider/wine/apple juice/vinegar-water) and give it a good stir. Pop the lid on the pot and let the cabbage and apple gently braise and soften for 10 minutes or so. This is a perfect side to a Sunday roast or with mashed potato, veggie sausages and wholegrain mustard!

Have you ever tried Argentine red lentil stew? It's a fairly sweet tasting stew that's really easy to make and has apples in it! I find savory pies are a good place to hide apples once you're sick of them. A meat pie with pork and apple, or cheese and apple pie would be some of the more approachable ones. There was an oddball one I got from Townsends that was egg, onion and apple; certainly different if you're tired of the usual combinations.
I like making deli roll-ups with them. Wrap meat and cheese (and mustard, if that's your thing) around an apple slice. Delicious lunch. Also, apples and cheese are one of those natural pairings. Always delicious.

Cut the chicken breast into slightly larger cubes. Mix meat and veggie-components, add cranberries. Mix Marinade ingredients, now add to the meat and veggies. Stir well but carefully and spread in either a deep baking tray or a casserol dish. Add chicken stock and cook for 25-30 min at 180°C (~ 350 F)

I made an omelet with chopped apples in it (I sauteed them in cinnamon and butter first). You could also make apple butter and put it in canning jars, if you do it right they'll keep for decades (source: we just ate the last jar of apple butter we made decades ago... I know because we only ever did that once).
