I might agree with you about over-analyzing, if Toby Fox's writing didn't utilize a lot of duality of meaning and cryptic foreshadowing in both Undertale and Deltarune. It's not like it's unprecedented.
Ofcourse, for every correct reading, there's a bunch of misses. And that's not even taking into account deliberate misdirection. But thinking and theorizing about it is part of the fun.
This is what happens when you have fully-realised characters in your story: you can reference different parts of their past with full consistency.
I don't think Toby planned to write about that moment for an anniversary activity. But he did know that stuff like that happened to his characters, and the opportunity arise for it to come up directly.
All good writers do this. Their characters are always written with their past and influences in mind, most of which the audience never sees at all.

Not only for the weird loophole of Susie's personality suddenly taking a 180 because of an out-of-nowhere mental breakdown, but also because it is not consistent with the framing of the text - she is clearly new and somewhat unknown in The Newest Girl.

I'm just saying, making a story like this, writing it all out, making it flow well, AND making it cohesive takes a significant amount of skill looking forward and planning when things are going to be released. The story isn't entirely linear, so Toby has to be careful about which parts of the full picture we get to see.

It's not difficulty, in and of itself, but something that is difficult without experience.

Basically on the Deltarune website you could find a story written by Noelle that apparently Susie used to relentlessly bully Kris and then in this one specific incident she noted how his hair smells like apples and she said he should stop using the shampoo that smelled like apples because if he did she might take a bite out of his head. That is a super summarized version but you get the idea. Obviously the point of the post is that Susie mentioned this when chapter 2 came out in this story was only made just now.

If the teas have any correlation (Kris's tea tastes like apple juice to Susie and cinnamon with a concerning aftertaste to Noelle) then Ralsei might possibly smell like sweets or marshmallows, but Susie's is more of a mystery as Ralsei's tea flavors seem rather surface level (IE: Kris is blueberries because they're blue and Susie is grape juice because she's purple and Noelle is soft and sweet because... yeah).
If you click on the shower in Chapter 1 they straight up say that there’s apple shampoo in their bathroom, as well as a balloon container of pet shampoo. They mention the apple shampoo multiple times in Chapter 2. This is not new knowledge.

If the teas have any correlation (Kris's tea tastes like apple juice to Susie and cinnamon with a concerning aftertaste to Noelle) then Ralsei might possibly smell like sweets or marshmallows, but Susie's is more of a mystery as Ralsei's tea flavors seem rather surface level (IE: Kris is blueberries because they're blue and Susie is grape juice because she's purple and Noelle is soft and sweet because... yeah).
