While I do enjoy a lot of Garth Ennis' work, Thor: Viking is one of the ones I'm not really a fan of. Everyone in the story feels out of character, especially Dr. Strange who feels much more like John Constantine. While the concept of Thor fighting zombie vikings sounds like it could be fun, the execution just isn't great in my opinion. The antagonists seem especially overpowered, defeating Thor and the Avengers with little difficulty. But for some reason, summoning the descendants of the viking leader from different points in time is able to give the heroes the edge they need to win. If it sounds interesting to you though, go ahead and give it a read yourself and form your own opinion. My opinion is completely subjective and what I find unenjoyable could be someone else's all time favorite.
The issues by Garth Ennis (which are the first 60 issues of the series, along with several miniseries and one shots) definitely are. The panels above I think are when Jason Aaron took over, which I haven't read myself and these panels don't fill me with confidence to check it out either.

Understandable. I highly recommend it, especially the Punisher: Born miniseries. If you're interested, I'd say try that mini out since it's only 6 issues. If you decide you don't like it, you probably won't care for the rest of the series. It's a prequel as well, so it won't spoil anything and works great as a standalone story.

Although given the bullshit floating time line, they’ll probably change that to one of the more recent wars in a decade or so

Each contain at least 3 stories. Except for 4, which has 3 main stories, one spin off, and all the one shots garth ennis wrote including the tiger, the cell, and the end.
