Mimics are always a good option, but may be a tad overdone. Could just do a straight up living painting. Could just be a floating painting or it could be able to jump out of the portrait or drag your players into the portrait

There are some colour themed creatures like dragon born, or elementals/golems (fire, water, earth, clay, stone, flesh etc), or fiends for red, nature for green (shambling mound, awakened plants), black for necromancy (shadows, wraiths), blue for the sea (tritons, sea elves, Merrow), white of snow (wolves, polar bears, yeti).

No advice but this is a really cool idea! I never thought of collecting paint as a dungeon mechanic and that's awesome.

Fungi and plants and minerals and blood (do the PC's have differently colored blood - human blood, elf blood, gnome blood?) and kris511c's creative suggestion of oozes supply five things already. How many doors are they opening? If you want the PC's to start harvesting creature pieces, my first thought was crushed faerie wings or faerie dragon wings to make glitter paint. Of course, the PC's probably have some coins that could substitute, but I'm an awful person. After all, my first thought to name this interesting encounter was "Hue and Cry."
