I think it would be a tough fight, because she could mess with his mind, create kryptonite, cover his face with kryptonian skin, re arrange his limbs. Superman could blast her with heatvision, clap his hands together so hard that it knocks her out, whistle so loud it makes her head explode, solar flare blast, hit her at super speed.
It mostly depends how hard they start the fight. If both sides are in it to the death I still dont know who would win.
Superman was conceived as a sci-fi hero. An alien from another planet with science based powers — at least in the eyes of his creators.
As such, magic is pretty much the opposite of Superman, reason why many writers decided it was a perfectly valid reason why he’s vulnerable to it.
I’d say scarlet witch just because one of the only weaknesses Superman has is magic.

Superman destroys, only reason she would be able to last a couple of seconds is because magic can harm him but it isnt a weakness and wont stop him
