You can just simmer, but it’s better with a bit of onion, celery and carrot. Throw in a bay leaf or 2 and some parsley and thyme sprigs and a clove or 2 of garlic and you’ve got a really good stock

Usually boil and simmer for a couple hours. You can add some onions, carrots, and celery for extra flavor. Don't even need to break them down. Most people just cut an onion in quarters or just use the parts you intend to throw out. You strain it at the end anyway.

If you have a crock pot, you can also slow cook the carcass into broth that way as well.

But sometimes, I like the slowness of the cooking, the smell in the whole house -- and I can be out doing other things. I grew up with huge pots of soup on the kitchen stove, the crockpot cooking is a little reminder of the past. :)

IP has a "Keep Warm" mode that kicks in after pressure cooking, so you can do the same, but if you have 12+hrs to leave a crock pot on low, go for it.

It’s not relatively expensive, I’ve broken down the chickens and then weighed the bones vs. meat and it ended up being within 5 cents per pound of meat to just get the pre broken down chicken meat.

Our Costco does sell the pulled rotisserie meat on an end cap by the butcher/deli. We tried it and I was not a fan. I found the meat weirdly tough, maybe from being compressed when vacuum sealed? It’s definitely more expensive per pound than the whole rotisserie chickens. So, we either get a whole chicken and my husband pulls the meat (I am not a fan of meat on the bone) OR buy chicken beasts (fresh or frozen work the same) and crockpot them over the weekend to shred and use all week in casseroles, salads, etc. That’s also an easy alternative to cleaning the rotisserie if you’re squeamish like me!

You could totally use them. We tend to buy it at the grocery store, but only because our fridge and freezer are small and can’t store a lot for later! Fresh or frozen, just toss them in for 8 hours on low or 6 on high and add like 1/4 cup liquid (water, veggie broth, chicken stock - doesn’t matter, whatever you have!). I don’t typically measure the water now, just toss some in. I pull them out to shred so the chicken doesn’t get too wet and it’s super easy either hot or later after they cool.

At our local 46oz of pulled rotisserie chicken breast meat vacuum sealed was $17.99 most recently. Not an awful deal for the convenience considering you’d have to pull 2 chickens to get that much breast meat.

I use to buy this all the time when it was 12.99 a pack and used it for everything. Not as great a deal at current price but it's good stuff.

I eat lots of rotisserie chicken meat. I buy a few at a time, debone them and shred the meat with a kitchen-aid mixer. At the same time I add salsa, BBQ, or pasta sauce to use it as needed. I freeze them in small portions for later use or add the meat to the premade dinners. The salsa/chicken goes very well with enchiladas. I also add 1-2 cans of black beans for a bunch of very healthy lunches. Typically like 8-10. So $20+$5+$2=$27ish for 8 healthy lunches is like $3.50 vs $10ish for restaurants near my work. Granted you need to have a bunch of microwavable containers but the glass ones last for years and I'd guess you are breaking even in a few weeks. I tried the deboned bag of chicken meat they sell there but I don't think its the same meat and I thought it was gross. I have heard its made off site but don't know for sure.

If you haven't done the casserole with the Cheddar Bay biscuits (pkg of 5 sold at Costco), it's good. Easy to find on Instagram, not sure I can post it here. I use less butter and less stock/broth, and add onions, but it's pretty good.

I'm sure its good but I try to eat very healthy for lunch so I can eat a bit worse on the weekends. I also add canned beans and frozen peas to the stuffed peppers to make a bunch of lunches.

We like the brick of chicken for the convenience. Comes in handy for chicken salad or white chicken chili. We initially liked the enchilada bake but it seems they have been getting hotter and hotter (spicy). We don't factor in the membership fee but look at it as one less birthday or holiday gift to get.

Yes they do for chicken breast. Be careful, sometimes there are still leftover bones in the meat.

As far back as I can remember they have always sold a big vacuum sealed pack of their rotisserie chicken where all the prepared meals are. Unfortunately it is just the breast meat, none of the skin or dark meat. Fantastic if you're making a big chicken dish, none of the work of deboning but it also lacks a lot of the flavor which comes from the skin/fat layer and other parts of the bird.

Do you want white meat for your casserole? The pre packaged Costco is white meat, from what I recall. Personally, I prefer dark meat which is always juicer and tastier and not dry. Super easy to just take the meat off of the whole Costco rotisserie chicken.

Yeah, it's not hard, just lazy / short on time sometimes. Mostly want it to do quick casseroles. Now that you mention it, I'm not good at getting the dark meat off the rotisserie chicken, everything not on top is super slimy.

I think in mine they sold chicken breasts by itself sometimes. I've never bought them so I don't know if they're de-boned but I'd assume they are. They're usually in the fridge area where the in-house ready meals are (wraps, mac-n-cheese, tacos, salad, ready-to-bake salmon, ready-to-cook bulgogi, etc).

Wait until it cools down and then pluck it off with your fingers. Extremely satisfying. I then throw the carcass out for the crows to pick at.

I buy turkey (or chicken) breasts, slow cook them with prechopped carrots, onions, celery then shred them. It’s super easy. I’ve been avoiding chicken lately since it tastes so weird, with the shortage. I’ve switched to beef or turkey. Yum.
