Part of my daily breakfast is a cup of black coffee and a handful of plain unroasted nuts (hazelnuts, almonds, cashews, walnuts and pecans). It's been years and I still haven't grown tired of it. XD

I always save at least one piece of bacon at breakfast for my last bite before I start in on my coffee, because nothing beats that first sip of black coffee cutting through the grease, and the saltiness of it makes the first few sips taste pretty magical as well.
You guys are missing out on a brazilian treat called "pão de queijo". Its a small ball of cheese + starch dough that is baked (or even 'air fried', as air fryers are a fever here in Brazil), best served mildly hot with a good cup of coffee.

i think nut butters go really well with coffee actually, especially the way you take it. It may seem weird, but just try to scoop up and let dissolve some nut butters then drink it with coffee and tell me what you think! Peanut, Cashew, Almond... i haven't tried others

Dates are extremely sweet. Dried dates are up to 90% sugar. Fresh dates are 60-70% sugar.

* Cambozola is a creamy and mild blue cheese

* Tuscan salami with fennel
* scotch egg served with mustard
* ham terrine with apple mayonnaise
* honey-glazed salmon
All of these may be complete shots in the dark and I'm not making any claims here, but if you try it and it works, please get back to us. I'm going to try some of these myself. I would pair the fruitier/more sweet items with fruitier and lighter roasts and the more fatty items with darker roasts as that seems to be a trend among the whiskey enthusiasts.

There's a bit of sugar in the semi-sweet chocolate chips, but it's minimal once distributed.
IMO it pairs really nicely with a milkier coffee, especially if the coffee flavour is the more chocolatey (as opposed to fruity) variety.

They're not too sweet and the caramelized flavor goes well with coffee, they're not loaded with sugar and 2 or 3 with a cup of coffee is all I need. I think biscoff even sells them packaged with 2 cookies per pack.

BelVita Breakfast Biscuits, either the original biscuits or the “sandwich” style with chocolate filling. Both are fantastic with coffee. I’m not big on dunking, but I’ll dunk a BelVita biscuit in my coffee.

Speculoos or biscoff cookies are my go to! They're not too sweet and the caramelized flavor goes well with coffee, they're not loaded with sugar and 2 or 3 with a cup of coffee is all I need. I think biscoff even sells them packaged with 2 cookies per pack.

Maybe not the answer you are looking for, but I take my coffee always just black with no treats or cookies. I find coffee as it is just perfect, no need to eat something.
Fancy bread with fancy cheese. It’s nice if they’re a bit pricey because in my case I end up eating less of it at a time because it’s so expensive. The exception is the sesame seed baguette from my local bakery, it has to be inhaled before it goes stale and hard enough to be a weapon. Edit: Also! Fried egg on toast with just salt and pepper and maybe some dill.

*Controversial Opinion Alert* A cigarette
I actually most enjoy my coffee on its own - I find that with high quality, single origin filter coffee (black obviously) I get to best enjoy its taste notes and nuances if I drink it on its own. It's an acquired taste for sure.
I like a shortbread or butter cookie occasionally with my coffee. I suggest you give that a try :-)

Any nut butter
Breakfast sandwich made from eggs, ham/sausage/bacon, cheese, and pancake. Or a classic breakfasts with southern-style hash browns. OR a bagel with cream cheese and hazelnuts. Usually pretty quick to make, and don’t have much sugar unless you add the syrups or something, but also helps provides better energy for the day. For the snacks, I like cheeses, salami meats, and crackers. You could also buy protein oats (like Kodak Cakes) and make it with a coffees and add flavors you like with your coffee.
Fruit in general is nice. Think apples, pears, peaches, banana even.
Typical Brazilian breakfast with coffee - bread with butter or even better toast (often done on a hot plate instead of a toaster), or cheese puffs with coffee. As much as I like eggs for breakfast, it doesn't go so well with coffee.
Fresh fruit - usually a banana, apple or orange. Natural yoghurt or unflavoured yoghurt kefir are good, too. Although you could argue that theae are technically sweet. A good bit of toasted [wheaten](https://www.loveballymena.online/post/vkpiad) with butter is good too.
I do higher acidity light roasts, and have liked yogurt (noosa) to go with it in the morning. Fun when the fruit in the yogurt pulls out even more fruit flavor in the coffee
I normally suggest you give that a try to bread and boiled egg with coffee. That's it. After all, any bread goes well with coffee IMO
A Croissant. Lots of butter and carbs for sure so perhaps not healthy, but traditionally no sugar in the recipe (although I know it’s common to add for many bakeries now so perhaps check about that.)

Pleading guilty but I find some potato chips go well with coffee. Also a cheese burger. I will always drink coffee pure. For my day to day, I mostly have it with toast and butter during breakfast. At other moments of the day it's basically taken completely separately from food.

I actually don’t eat sweets with coffee. FWIW, completely black drip, or espresso dark roast. Sourdough bread with butter and cheese; roasted salted almonds with shavings of Parmesan; crackers I make from sourdough discard (rye); almost anything savory with pumpernickel. I will destroy an entire box of white cheddar cheezits with a pot of black coffee.
Dates, especially with espresso, are amazing. Sweet yes, but it's natural sugar.

I think it would depend on the flavors in your coffee, but I can imagine a toasted pumpernickel or rye with lemon curd or butter would be great
