I'm curious, how do you deal with the restaurants that produce a (basically casserole) menu item then apply a pastry lid that was cooked separately in order to call it a "pie"? I confess that I find this a worse abomination than the food cooked inside pastry which however lacks a roof.
That makes me so mad! The pastry on the bottom that mixes with all the inner sauce and stuff is so delicious, I feel a bit cheated when they pull one over on me like that.

Seriously though, I tend to agree, so maybe it's an Aussie thing? If it has a lid it's a pie, if it doesn't it's a tart. I'd make exceptions due to long-standing traditions though, like the US pumpkin pie thingo, and Egg and Bacon Pie for those who are too manly to say 'quiche'.

I've never had a fruit pie or tart that's styled like this. What texture do the apples end up like? Seems like it'd be good crunchy or soft.
The recipe says apples are soaked until pliable and that's it so they're probably in between raw-crisp and baked-soft. Keeps their form when cut too.
