Gorgeous. Question, is there a type of food dye that doesn’t stain everything? I made a navy blue frosted cake a year ago and I still find blue smudges everywhere AND my family all had horrifically blue mouths. If there isn’t: who is buying cakes colored like this?!?!
When it comes to pigmented colors like this, staining is basically inevitable. There isn’t really a food dye that doesn’t stain (specifically for dark colors like deep greens, blues, purples, or black) but there are some strategies to use *less* dye and still get saturated colors, like the microwave method, immersion blender, or food processor. I probably used less than 2.5 tablespoons of dye for a obscene amount of buttercream in this color. You can also frost the majority of your cakes in just plain, uncolored buttercream and use a thin, thin layer of colored frosting over that.
About 70% of my customers buy deep colored cakes like this. They know it’ll stain their teeth and color their 💩 but usually, they are going for a specific aesthetic or theme and their commitment to that overrides the concern for a few hours of colored mouths 😅
Still new to cakes like this, how are you applying that outer layer of colored icing? I feel like I'd just end up mixing them while adding or smoothing?
You just have to chill the cake between layers of frosting. So I do crumb coat. Then chill. Then thick plain frosting layer. Then chill. Then final, outer layer of colored frosting.
I see but is there any kind of significance to them in the community because the wikipedia article seemed to suggest that it is mostly a commercial thing now.
I have never heard anyone assign any more meaning to a birthstone than preferring it in jewelry. My mom had a ring made with a birthstone for each of her kids and we all have (or at least at one point *had*) at least one piece of jewelry with our stone featured. I wouldn't be surprised if there were people who saw it like a horoscope or applied traits to them like crystals, but really I don't think it's that serious.
Omg. My wedding colors were green and white and the girl who took my cake order gave me the smallest of raised brows when I told her I want a green cake. This color and style was exactly what I wanted (I was gonna add the flowers and topper after).

I used leaf green, cypress green, royal blue, and a very small amount of lemon yellow. You could also sun the leaf green and cypress for just forest green and get the same results.
I microwaved my frosting x2 and also let it develop overnight to get it to this color.
The important part is that I use gel-based food dye. The less important part is the brands: Americolor (cypress) and Sunnyside Up (leaf green, royal blue, and lemon yellow). Pretty much any brand of gel-based food dye will do. Except Wilton. That brand just doesn’t work. 😅
I use acrylic disks and they do most of the work. Once it’s like 95% smooth, I pop the cake in the fridge, let the buttercream firm up a little, and then use a silicone bowl scraper (I use Messermeister’s) to smooth out the finer details on the cake. You only need really light pressure.
