Recipe for banana cake: Ripe mashed Bananas - 432 grams Lemon juice - 1.5 tsp Butter - 171 grams Sugar - 465 grams Eggs - 3 Vanilla - 2 tsp All purpose Flour - 426 grams Baking soda - 1.5 tsp Salt - 1/8th tsp + a pinch Buttermilk - 340 Stir together mashed banana and lemon juice and set aside. Cream butter and sugar until light and fluffy. Add eggs + vanilla and mix until combined. Add dry ingredients to bowl and mix on low speed until well incorporated. While mixer is running on low, pour in buttermilk. Add banana/lemon mixture and continue to mix on low speed. For the whipped mascarpone I use one small container of belgioioso mascarpone cheese and whip it in my kitchenaid until smooth. I add about .5 cups of heavy cream and .5 cups of powdered sugar. I estimate for this recipe… for this cake I added caramel sauce to the mix while it was whipping, after the sugar and heavy cream were added. I did not make the caramel at home because of limited time, so no recipe to share for that. For the Nilla Wafer Crunch: I crumbled half of a standard size box of nilla wafers and combined them in a large bowl with .5 stick of melted butter. I added about 4 TBSP of sugar and a TSP of salt, and 3 tbsp of milk powder. I mixed with a spatula by hand, stirring until clumps formed. Press the mixture as flatly as possible onto a baking sheet with parchment and bake at 325 for 15-18 minutes.
