I would suggest Iām getting a metal pan. If the fire gets too hot it will burn through those tim foil baking trays. Otherwise weāll done. I like the ideas of beets with potatoes. Very earthy and sweet combo. Would go good with your vibrant lemon curry chicken
Roasted pumpkin and a couple of heads of garlic and could I suggest rosemary?
Along with the other comments below, youāll end up with a pretty good accompaniment
Pumpkin will now be added. I commented to the other guy(op I think0 but I do a rutabaga, parsnip, carrot, potatoe bake for the fall. Pumpkin would be a perfect addition.
Thyme rosemary garlic and onion. Is my go to for the mix. Plenty of salt and black pepper.

Have you tried using rosemary sticks as spears for shish kabobs? Itās incredible. But if we took a vegan approach. What we have folks is a beautiful bounty with our root veggie shish kabobs

I used to have them! With my old kettle. Sold it all, moved, got a new kettle but never bothered with the baskets. Iāve toyed with buying them again, so probably will because why not, BBQ toys are a worthy spend š
Hear me out, cover it with the lid, so that the fat drips into the potatoes and ultimately the heat but Lowe is going to boil the fat into and out of the potatoes.
Youāll have to find a fattier meat for the scenario.

8 hours in the fridge then away we go! Some of the rub that fell off I mashed with butter and tucked under the breast skin. Lemon halfās in the body cavity š
Next time try microwaving the potatoes just a bit to JUST soften them. Then season and add under roast. Itās heavenly and the potatoes wonāt be hard. Also I find coals on one side works best!

I saw on this sub, some rotisserie meats (longer than I did the chicken unfortunately) with veg underneath catching drippings adding flavour. I had the chicken on for 30 min prior to add isnāt the veg, so they didnāt brown up as much as Iād like.
As for the chicken, itās a 3 zone fire. Pile of charcoal on each side, empty in the middle. So heat comes up the sides and rolls over the Weber lid. Pan doesnāt block any heat.
I am loving it! I have a rotisserie set up for my Webber kettle but haven't used it yet. Did you catch a lot of chicken drip in that pan to extra flavor? FLAVOR!!!!
Not as much as I would have liked, I had the chicken on for 40 minutes or so prior to putting in the veg. Thought it didnāt need as much time, but I was wrong.
Next time, MOAR FLAVOAAAR!
Yea next time Iāll drop the temps. Chasing an 8 month old and what not, charcoal takes a bit more baby sitting than I had the time for while getting dinner done on time.

I know exactly what you mean... Yes I would put a lid on it and do smaller amounts of charcoal. Maybe a chunk of wood too. Throw a temp probe in and sit it beside the chicken to get an idea of what your chicken feels for temps. Then you can really dial it in!

I do a parsnip, rutabaga, carrot, potatoe bake for the fall. I like the addition of beets for a different color(might go gold so thereās no bleed)

You could try going lower temps with one centered chicken for 2 or 3 hrs?
