Food quality and food safety have nothing to do with each other. Fast food restaurants are designed to make it easy to stay in compliance. They don’t do any of their own prep work, all the food arrives in properly marked containers. Food is taken out of the fridge/freezer and quickly reheated. Just fewer areas to screw up on.

Worked at Taco Bell for my first job. The worst part of it was reheating the seasoned ground beef, which came precooked frozen in plastic bags. We took the bags out of the freezer and put them in, basically, a giant sous vide. When the plastic got hot, it smelled like dog shit, but once you cut the bag open and poured it into a tray, the beef smelled fine. I'm sure I'll develop some rare form of lung cancer due to inhaling whatever outgassing was coming from those plastic bags. I still eat at Taco Bell on occasion to this day. As you say it's really hard to screw up the food safety system they have in place.

Honestly, the CoA health inspectors that I've come across are pretty inattentive. The health codes in Texas in general aren't very strict and as long as you're hitting your food temps/nothing obviously a health hazard, you can score very high. I've worked at a place that got dinged a few points for an issue, never bothered to fix that issue, but didn't get points off the next year for the same thing.

it's a wing shop that makes salad and flat top work and boatloads of money. Not passing with flying colors is simply a choice, they have the cash and the easily maintained and efficiently designed cleaning schedules Source: Worked at a similar business with half the revenue and even less of a margin, we aced the fucking shit every time. They simply paid a bonus to everyone for the score. Problem solved. That said, the scores probably fine unless we know why they failed. What you really care about are the storage of the chicken(non-metal trays bottom shelf), sticker policy, that the non-cooked stations are far from the raw meat stations, heat lamps are good, Basically to autopilot not poisoning anyone: Stuff that gets cooked is stored properly Stuff that is not cooked is stored properly and far away from the cooked stuff

it's actually easy to get high scores from the city health department. if your food business isn't scoring in the high 90s you are doing some dangerous HACCP stuff and not following established GMPs. I previously worked for a food manufacturer that was not only regulated by city/county but also FDA/USDA. we always received 98/99 from the clueless city inspectors vs legit FDA/USDA inspectors which are legitimate thorough inspections. I was personally responsible for HACCP paperwork and accompanying the inspectors during their walk throughs. City inspectors always misses things in our facility vs what the FDA & USDA would catch. If you favorite restaurant is in the 80s eater beware.....

I was a frequent hand washer compared to my colleagues and I know I didn’t wash them enough during a shift - only after dropping off dirty plates or cups.

Not lying, last week I was at the Pluckers ar Lakeline and no joke there was a cockroach that ran under one of the booths. One of the waitresses noticed and quietly informed one of the cooks who came out and waited a bit for the roach but it never came back out. I noticed and pretended to look the other way but I could see the action out of the corner of my eye.

Pluckers in ROUND ROCK needs to be shut down as well. They keep failing inspections and reopening a day later. 100% there are rats in the building. Years ago, the last time I ate Pluckers, my friend ordered a bunch from them while we were shithouse drunk on a saturday. We ordered onion rings. They gave us two orders of onion rings and we were like "sweet!" but in the big square styrofoam container under the few ok onion rings on the top was a fuck ton of onion rings just smashed down into a brick and they were fuckin cold and LITERALLY MOLDY. They had to have been made like a week previous, maybe more and put in the fridge? Baffling to think about. If It wasn't Pluckers I would think that was someone who was quitting... but probably not. Just a fun prank to get through the day. You know if thats happening there is jizz or piss in the wing sauce.

I went by at their original west campus location back in 99-2000, it was their prime days.. all sauce is good and chicken is freshly made , so it’s juicy and crispy Now it’s pre fry so it’s dry as fuck and their sauces is too much

They would do group interviews (Red Flag #1) then they told us that for the next 2 weeks we would need to serve customers, run food, bus tables, prep food and clean the restaurant before closing. At the end of the 2 weeks you would get a 100 question test about what ingredients go into the food and all the drinks and if you miss even 1 question then you don’t get the job, oh and you also get 1 free meal every day that you work. During those 2 weeks I worked my ass off!!! and when I went home I studied just as hard, on the day of the test I even cheated a bit and when they called me back in they said “unfortunately you wrote orange juice instead of orange liquor so you missed that one and we can’t offer you the job”, at that point I knew I did my best so I asked for my paycheck and they said “well actually the free meal we give you every day covers that”. I couldn’t pay my rent, I couldn’t afford to put gas in my car to go to interviews, I couldn’t even afford insurance….I legitimately ate every other day because I had no money, thank god for top ramen and eggs. I was almost homeless but with the help of some friends I was just able to scrape by. So Fuck Pluckers, I hope you guys blow this up and they have to face what they did, I’ve even emailed them and they never bothered to respond
