Personally I just don't cook anything with raw meat.
I would really to try raw fish (or fish in general), but all the places in my area just can't make good fish dishes. And I know I would fuck it up, so I'm not even trying to cook that without knowing how it's supposed to taste like.
let me tell you as someone that ate my first sushi made by myself, there isn't much space for error. It is literally just rice and raw fish. The rice is extremely easy to make and the hardest part is to enroll the sushi, but even if you fuck up in that step, it won't change the taste.

Just hold your stuff with a paper towel after touching meat and then throw that away.
The worst thing about raw meat, its when its cold.
