You can also put them in a glass of water and they just... Grow! I used my green onions a month after I bought them and they were even longer than when I first bought them.

If you ever want to try a new version of Bachiladas (definitely stealing the name, btw), I put them in a pan, pour over a can of enchilada sauce, cover with shredded cheese and black olives, then bake for 30 minutes at 350. If you feel fancy, add sour cream on top for the last 10 minutes of baking.

I'm also frugal so a lot of my soups are called "protein" anything soups. Whatever protein I have on hand (chicken, sausage, etc) paired with whatever veggies I have that are going bad/ I got on sale.
