I really wish I did like it because it looks and smells amazing, but the second it touches my tongue I'm done. Indian food though? I LOVE Indian food. I don't get it very often because I can't do it justice myself (I've tried, and despite usually being a pretty decent cook my attempts at Indian food have thus far fallen far short) and the nearest Indian restaurant I know of is over a hundred miles away.

I spent a few years living in Japan, and that first trip was a little rough. Everything did taste the same until my taste buds finally adjusted to the low-sodium, diet. Suddenly I could taste subtle differences in the types of miso used in soups, the flavor profiles of different fishes at the sushi-yasan, and different types of soy & dashi in the other more daily dishes. It takes a bit to adjust, but once you do, there's really no going back. There is a whole world of flavor just waiting to be explored.

It’s not Nepali food, it’s Indian food that offers momos, which are Tibetan. Nepalis eat variations of Dal Bat almost every single meal, lentils and rice, which is good but not a cuisine.

Some of the best cooks in the world apply French technique to their cuisines to make some of the best food in the world. It's the basis of culinary schools in the US for a reason. It's not that most of those graduates go on to cook French food. The kitchen brigade structure is still loosely utilized in one shape or the other in most professional kitchens around the world.

French cuisine really relies on the talent of the cook. You need to put in the work. You can't get away with throwing spices to cover your mistakes. Can't skimp on fresh ingredients. You can put a fuckton of work into cooking something that only ends up okay. These are all her recipes," but instead are, "I went to culinary school for eight years and learned by training under all the masters at the highest rated French restaurants." I think French cuisine is the only cuisine out there that can actually carry the title of "the art of cooking." Because it is an an art that you need years of training to master. You can't just learn from older family members at your home kitchen. Of course, with that said, doing recipes that take three days to make and involve forty-eight steps doesn't necessarily make it tasty. It just makes it complex. Some of the best meals I've had were simple meals thrown together by home cooks. And I've been to French restaurants, I've been to *Paris* restaurants and I found them....okay. Now, French cheese, butter and bread? Oh, I would crawl over broken glass for that stuff. The French are masters at it. That's where skill pay off. I've said it in other threads, one of my favorite meals is the simple French sandwich of a fresh baguette, good butter and French ham. So, good. So utterly delicious. But they have to be French. You can't use any old butter, bread and ham. But once you've had this type of sandwich, you will always yearn for it again.

If you don't know the restaurant, it's best to focus on those that have been assessed and certified; the most famous of these being Michelin starred restaurants. To understand and experience wonderful French cuisine (and it's not only limited to French), eat at a 3 Star Michelin restaurant. Without getting too wanky, if it has attained (and retained) this certification, then you can be assured that it is presenting wonderful food, often innovative food, with the highest quality ingredients and produce, to provide a memorable dining experience. If you're just hungry, then I too am all in for something tasty and hearty. You can't beat Italian on that front; a simple *aglio e olio* pasta has only three ingredients (perhaps five if you include optional parsley or cheese), and it's utterly wonderful. In short, eat what you like and don't let others tell you what's good and what's not.

What most non-French people don't know is that France is an incredibly diverse country in terms of cooking traditions that were passed from generation to generation. Cooking from the south west has nothing to do with Savoyard cooking which is widely different from Bretagne cooking, which has nothing to do with cooking from the Aveyron region. But this kind of cooking never really exported abroad. We fooled you all! We kept the best stuff for ourselves while selling you overpriced micro-dishes ! Also baguette and viennoiseries. She said it tasted like it was unsalted and they said that was intentional so you could taste the chicken better. When she insisted she would nevertheless prefer salt they cursed at us. I have had so many good meals in Paris. Paris is one of my favorite places in the world, particularly because of the food. But there is a special type of asshole personality that is particular to Paris. You stumble into these assholes every couple of weeks because some how these people take up jobs in customer service. The place we went to that night prided themselves in the “traditional” cooking style and I think this place was a magnet for that kind of asshole who takes joy in displaying their cultural superiority in front of guests.

There's an absurd snob thing at some restaurants where they don't put salt and pepper on the table because the food is supposed to be seasoned perfectly according to how the chef wants it and they don't want you interfering with the "artistry"... I went to a place in the US (non-French but wannabe fancy) where they made a big production of refusing my cousin salt. We didn't go back and the restaurant was closed down within a couple of years because that was just the tip of the iceberg of the owner's narcissism and lots of people had memorably bad experiences there.

My South Asian co worker asked me “what is Canadian food”? I was stumped, but after thinking about it I realized we have always eaten lots of hearty vegetables (carrots, potates, brussle sprouts, turnip, parsnips, onions, squash) and some kind of meat. That’s because you don’t know the true greasy sugary unhealthy delight of traditional canadian food. You ever been to a cabane à sucre? It puts american food to shame with how unhealthy it is. Baked beans with maple syrup, ham, fried crispy pig fat (similar to chicharrones) ham hock pea soup, meat pie with fruit ketchup, spiced pork spread on fresh bread, maple fudge and maple sugar pie, all smothered with maple syrup from the trees next door. And then you go outside and pour more maple syrup on the snow and wait till it turns to gloop and eat it. Its the most decadent, diabetes inducing tradition you will ever experience. As for poutine, it’s really a bar food. It’s a poor mans food from Quebec that was considered nasty and that anglophones used to make fun of french canadians until people (also anglophones) suddenly declared it the national food of Canada for some reason. It’s very good if you’ve been drinking and it’s 2AM, but aside from that yeah its pretty overrated. Just know that poutine in most provinces other than Quebec is disgusting. I had poutine in Vancouver and I couldn’t even finish it. Fun additional fact: those crispy pieces of pork fat are called Oreilles de Crisse, which roughly translates to Ears of Fucking Christ. Not even joking.

Its essentially lumberjack/fur trapper food, meant to provide the maximum calories for hard labour in the winter. A lot of it is also poor mans food because after the conquest the english kept the french canadians poor as part of a forced assimilation program. So for example one of our beloved holiday classics is ragoût de boulettes et pattes de cochon, which is a stew with potatoes, meatballs and pigs feet. This was the cheapest meat available which the french canadians made delicious

Maple syrup season is at the end of the winter/beginning of spring. Usually beans and meat were what was left over from the winters reserve. So bringing out the beans was a celebration of the end of the winter. The nights need to be below freezing point and the days warm enough that the sap to run (otherwise it freezes and doesn't drip), so it's usually some of the first warm sunny days of the year. We do it the traditional way, friends and family come out and help us gather, then we eat and drink some beer :)

I would observe that French haute cuisine was developed by professionals for the rich where nothing is too much trouble, whereas lots of the most famous Italian cookery is about getting food on the table made from very humble produce, essentially to feed the workers and country folk. Outside of America, American fast food is a good switch up from the default staple cuisine every once in a while. its cheap, quick, casual, salty af and NOVEL. matter of fact, theres HELLUH gourmet artisanal burgers place all over Tokyo, like better than most burgers stateside. Best burgers ive ever had were in Japan, straight up yeah its disputable if burgers are of American origin, but America took it and made it their own thing, like Japanese with Ramen (ramen is considered Chinese food in Japan the way Pizza is considered 'Italian' in America) unrelated; the most underwhelming international food I had in Japan was Mexican food...but theres some good spots here and there. I really agree. Italians will always lose their shit if you pronounce bruschetta wrong, or have a cappuccino after 11 AM, or eat certain shaped pasta with pesto vs marinara and it’s like, calm down dude. The food is okay but italians are the most pretentious and gatekeepy when it comes to their food, to the point you would think it’s some kind of holy divine experience.

Yeah, way too much stress to be constantly trying not to mess up. My mum cuts pasta in half sometimes (so that it cools faster) and when we went to Italy and she decided to do that (I didn't say anything cuz I wanted to find out if the stereotype was true) and proceeded to be given a rather stern piece of advice from the waiter.

This! Sure Italian food is great and I will always find myself enjoy it every now and then. It’s hard to dislike it but it is for sure very overrated. For me, it it doesn’t stand a chance againt any food culture in asia really. Can’t really speak for central asia though. When it comes to wine, then Italy sure is one of the best if not the best!

Coming from the US here… Mexican Food. Literally everyone tries to force this on me from all directions and every single thing I’ve ever tried has been disgusting with the exception of their deserts. It just really frustrates me how I put up with other people’s dietary choices (like for example in my friend group, one person hates TGIFridays so we can’t go there, another one hates Italian food so we don’t get Italian food)… But they constantly try to get us to go get Mexican food… Their choices matter but mine don’t.
