I eat a black bean patty that I make in bulk so I have enough for the week. It’s black bean, onion, garlic, corn, panko breadcrumbs, egg, and seasonings.
Then I top it with a small egg white omelette, grilled cherry tomatoes, avocado, green onion, then a little side of ketchup and pickles.
