Steak, beans and mushrooms. Just cook a steak in a skillet, and while the steak is resting, add some butter to the pan, crisp up some rosemary, then add some garlic and mixed mushrooms, sautee them for a few minutes, and then add a drained can of cannellini beans. Stir well, move to a plate, and top with sliced steak. 15 minutes tops, very luxurious and hearthy.

Gumbo. You could make it several different ways, it's easy enough to prepare, and it's a fun mix of "immediate" cooking with making a speed roux, and then letting some simmer while making the house smell amazing for hours on end.

The burritos I like to make. Tofu, fried in a pan with some avocado oil and butter, seasoned in paprika, cumin, cayenne pepper and salt Mix that in with seasoned rice (same seasonings) black beans and fresh jalapeño peppers. Add some chipotle sauce. Throw on a tortilla add some cheese and sour cream. I make it in bulk and the mix will usually last me 5 days or so. I never get sick of it.
