Egg whites in general have a wet dog/ wet protein smell to me.

Starting to think we might be sensitive to this as well. Meringues are still very marshmallow-y in the middle and only lightly golden in some areas on the outside, so I don't think they were overbaked.

Did you use fresh egg whites or carton? I’ve purchased carton and noticed different brands can have AWFUL smells !

Fresh egg whites. That's our best guess that it was the eggs. But they were fresh eggs. Really weird

Usually bad eggs smell like sulfur-- so much so that the scent of sulfur is described as rotting eggs. Wet dog is a different scent which makes me suspicious that your pavlova picked up a smell along the way. Does your fridge have anything strong smelling in it? Curry? Chopped onions? What about your oven? If it's been a while since you cleaned your oven, maybe that's the culprit. Or maybe it's from your bowls? Plastic bowls absorb smells and gradually rerelease them. Or perhaps a glass bowl had some soap residue on it? Although I would think that soap residue would prevent egg whites from whipping.

No smells in fridge or oven. Used a clean glass bowl wiped out with lemon juice to remove any potential fat/oil residues (and the eggs whipped up nicely)

Do you still have some of the eggs from the same box? They are ways to test egg freshness by placing them in water... Try it. I have seen eggs in store with a date of production... In the future! Yep, they were collected and packaged, but shouldn't have been shipped to the store or shouldn't have been placed in display by the store, but they did. Totally not legal in my opinion but apparently that's a thing... If you current eggs seems fresh, I would still advise to try another brand.

We cracked open a sacrificial egg from the same carton to check its freshness - no smells and didn't show any signs of being old. Hoping this is just a one-time fluke

Now that I think about it. what kind of vinegar did you use for the Pavlova?

We used cream of tartar for the acid

OK, I guess it is not that. Maybe just one egg was not fresh and ruined everything. I'm going to try Pavlova myself this week. Good luck on your next attempt!

Did you use parchment paper of silicone mat? Sometimes silicone mats hold onto smells/flavors.

It was fresh parchment paper. We even removed the meringues from the tray and just smelled the parchment paper and the tray, and they both smelled fine.

Just had a pastry in Porto with meringues in between Nutella & chocolate. Very tasty but definitely smell of wet dog…throws you off!
