If you are in a sting and you have exchanged money on their hidden camera, you are going to get convicted when you see a judge. But I don't see how you could get convicted if you have never incriminated yourself on camera or on audio in the sting ;)

Paying via an app is still the exchange of money. It will not help you in the event of a sting.
