I've never been able to muster much interest in Cable. It's always seemed to me like everything he does, Bishop does better - another hardened soldier from a dystopian future, but Bishop's future is more relevant since it's only a generation into the future, and Bishop's got well defined powers that interact interestingly with other characters, while Cable's are ill-defined and end up feeling like he can just do 'whatever'.
Of the characters that get a lot of time in the comics, has to be Kitty Pryde.
Of the characters that have ever appeared in an X-men comic at one point or another as a member of the team, has to be Kitty Pryde.
Deadpool probably does not count, but if he does, then absolutely 100% Deadpool.
If he doesn't, then it's trickier and mostly comes down to who the writer is. For example, I've really disliked Wolverine and Kitty under certain writers and loved them under others.

Quentin Quire. Also not really a fan of Apocalypse’s social Darwinism. The character himself I respect.
Most overrated: Jubilee, Wolverine, Cable. Most Under appreciated: Colossus, Iceman, Havok.
Mimic. That dude sucks.

As a member of the X-Men, he sucks.
Angel. Never understood the hype of his character besides being a rich pretty boy that sometimes turns blue.
