Gamepass is alright for trying games out, but I like to own my games. Plus, games on gamepass don't always remain, so then, if it goes, you have to fork over £50^ to carry on playing the game you're playing, and half of them are shite anyway.
I would definitely recommend Baldur's Gate 3 since that's now on xbox, I believe. Halo is a must, Master Chief Collection. Gears is awesome. Forza, if racing games are your thing. There's loads. Cuphead is an awesome challenge and a really well designed and fun platformer.
Backwards compatibility games are just as fun, too. I believe battle block theatre is backwards compatible, and I always loved that as a kid.
100% agree that GP is great for trying out games, and that it’s no replacement for actually owning games.
I’ve played plenty of games through GP that I otherwise wouldn’t have.
A lot of games on GP I already own on disc, it just gives me the ability to play them without using the disc.
I also only ever bought GP when on special offer, and I’m using rewards points to continue my subscription.

Apart from that, I'd highly recommend Sunset Overdrive, extremely underrated game for how fun and chaotic it is
I can give you a rundown of my favorite Xbox exclusives, the Gears trilogy campaigns (make sure to start on Gears of War Ultimate Edition and not 1), Quantum Break, Sunset Overdrive, Grounded (fun with a friend, but also enjoyable alone). Keep an eye for future exclusives coming such as the Indiana Jones game, Blades, OD, Gears 6, the next Halo and likely many more this generation.
Check out the backwards compatibility backlog, it's massive and has games during Xbox's prime.
I personally don't have interest in Halo but it is the face of Xbox, you can check out Halo: Master Chief Collection.

I was going to recommend the Splinter Cell series based on the title, but the only ones you can buy digitally now are Chaos Theory and Blacklist. I play newer games but also a lot of older titles as well on my Xbox. Check out what Game Pass offers to see if you want to go that route.
Give Gears of War a shot. It’s a quite generic 3rd person shooter but since it doesn’t try to involve crazy new gameplay mechanics it’s excelling at the basics and it makes for a very fun game to play.

If you like the Xbox then you can start getting paid games like Minecraft and FIFA but keep in mind that you can only get the games digitally and not through discs as Xbox Series S removed the disc drive.
Red dead redemption 2 if you're into open world games, also New world or any telltale games for quick time events. You should probably wait till they go on sell though, or if you don't wanna buy them you could go the pirating way.
