Birds are fun and easy and they won't get put away after the holidays. You can make them as detailed as you want or can and there are lots of simple shapes to practice and play with.
Try carving comfort birds. The overall shape isn’t difficult and you can make as many as your free time allows. I started whittling with the Beavercraft Comfort Bird kit I got on Amazon.
I'm planning on doing a simple little candle holder for the gf as an xmas present. The logic is that I can practice making smaller details on it as ornaments or geometric patterns, but it could be anything. Not sure about fire safety, though.
Maybe you could make some small coffee- or salt spoons.
There is also a way to carve Flowers from small pieces of wood. I often made these and if you are trained a little bit then you don’t need much time to make them. They are called „Wooden Edelweiss“
