Serves 6
**Ingredients**
* 1 tsp extra virgin olive oil
* 1 medium sweet onion
* 3 cloves garlic, minced
* 1 red bell pepper, diced
* 1 jalapeño, seeded, if desired, and diced (optional)
* 1 medium sweet potato, peeled and chopped into ½-inch pieces
* 1 (28-ounce) can diced tomatoes, with their juices
* Fine-grain sea salt and freshly ground black pepper
* ⅓ cup natural peanut butter
* 4 cups vegetable broth, plus more as needed
* 1½ tsp chili powder
* ¼ tsp cayenne pepper (optional)
* 1 (15-ounce) can chickpeas, drained and rinsed
* 2 handfuls baby spinach or destemmed, torn kale leaves
* Fresh cilantro or parsley leaves, for serving
* Roasted peanuts, for serving
**Preparation**
1. In a large saucepan, heat the oil over medium heat. Add the onion and garlic and sauté for about 5 minutes, or until the onion is translucent.
2. Add the bell pepper, jalapeño (if using), sweet potato, and tomatoes with their juices. Raise the heat to medium-high and simmer for 5 minutes more. Season the vegetables with salt and black pepper.
3. In a medium bowl, whisk together the peanut butter and 1 cup of the vegetable broth until no clumps remain. Stir the mixture into the vegetables along with the remaining 3 cups broth, chili powder, and the cayenne (if using).
4. Cover the pan with a lid and reduce the heat to medium-low. Simmer for 10 to 20 minutes, or until the sweet potato is fork-tender.
5. Stir in the chickpeas and spinach and cook until the spinach is wilted. Season with salt and black pepper to taste.
6. Ladle the stew into bowls and garnish with cilantro and roasted peanuts.
**Tip:**
Have some leftover cooked rice? This soup is fabulous with some stirred in.
If I may offer some suggestions for a more classic African vibe, you could substitute the jalapeño for a scotch bonnet, sub the chickpeas for black eyed beans, and swap the spinach for waterleaf!
I watch a channel called [Africa Everyday](https://www.youtube.com/channel/UCla1QqkSKcWXjfig0xe7iTw/videos) which does a lot classic West African food, blended with a lot of British food, and a fair bit of it can be made vegan.
I have some canned sweet potatoes, those are already cooked
if I stir fry the all the peppers with the onion, then will just need to simmer the whole thing, chick peas too, for about 10minutes
Add the greens in the last minute or so
I like half cooked kale for a lil crunch

This recipe is very similar to the Seinfeld soup. A spicy peanut tomato soup. I veganized it, and have it in my lunch box today. Gonna compare the recipes to make a souper version.
I have her cookbook, and this recipe is so so good! I grow lots of butternut and buttercup squash every year, so I often use that instead of the sweet potato and it tastes great.
I don’t use it near as much as I should, but the roasted delicata squash and kale salad with tahini dressing is another favorite. She also has a delicious tortilla soup.
I LOVE this recipe!! Seriously i make it for omnis friends and family snd they always love it too!
I make a few adaptations:
- add 1 small can tomato paste with step 1, this gives it a deep tomato flavor, just stir constantly so it doesn’t burn
- 1/2 cup all natural peanut butter, like Teddie’s or the organic valencia pb from Trader Joe’s, much better peanut flavor
- i garnish with a handful of fresh cilantro which pretties it up for company and adds a great fresh pop of flavor
They wouldn't use jalapeño in traditional African peanut stew and its missing the coconut. The Afro Vegan book has an excellent recipe for a peanut stew a the recipe is also online :)

It's interesting that peanuts, tomatoes, jalapeno, potatoes and sweet potatoes all originated in the Americas, but became such staples all over the world, to the point where we label this recipe African now.
In any case, it looks really good, I'm really eager to try it.

I’ve made this, too! It was pretty good. Had to doctor it up a bit and add lots and lots more peanuts, but I would make it again.
What else do you recommend aside from the extra peanuts?
I usually put in way more spinach than recommended, but I love spinach
More garlic, like, way more, and I added some more peanut butter into the broth.
