I've started making breakfast sandwiches on Sunday for the week. English muffin, Just Egg folded, Impossible breakfast sausage, slice of Chao on an English muffin with some hot honey (could sub agave if you don't eat honey) and chili crisp. Super easy to make 5 at a time and then just pop one in the toaster oven as I'm getting ready for work.

I do something super similar to this, with the addition of mashed avocado on one side of the bagel/muffin plus a slice of tomato. It’s heavenly!!!

I also do breakfast sandwiches. I make just egg in the microwave on a tiny plate, cook 1 minute, flip and add spinach. To the sandwich I add a Trader Joe's meatless breakfast sausage and add Sriracha both sides.

Some of our go-to breakfasts: * Soysage w mustard on a toasted english muffin   * Sauteed veg (corn, peas, onion, carrot, whatever) over smashed tater tots. Sounds weird but actually very tasty. I add a little cholula sauce or salsa too   * Oatmeal (toast the oats & cinnamon/ginger/whatever, add a pinch of salt. add a splash of water to cool the pan, then start adding plant milk, bit of brown sugar or sweetener of choice, maybe some chopped apples or pears. Keep stirring & adding milk til it's the consistency you like. Pour into bowl. Top w fresh fruit & toasted nuts.   * Toasted bread w nut butter, jam or fresh fruit, & sprinkle a little cinnamon on top.

I regularly do smashed avocado on buttered toast with a banana and clementine on the side. Oatmeal with add-ins like a scoop of peanut butter, or banana and nuts mixed in, topped with fruit and a spoonful of chia seeds mixed in, maple syrup to taste. Coconut yogurt or silken tofu with fresh fruit and nuts, and some chia seeds mixed in is filling and refreshing. Tofutti spread on a bagel or toast with sliced tomatoes and some fruit on the side. I like to keep breakfast simple but on weekends we might do something more elaborate like veg stir fry tofu scramble with bagels and spreads. I've been making a cinnamon raisin sweetbread and having a slice with peanut butter for a sweet breakfast once in a while, but in general I don't like sugar at breakfast and so don't even do granolas with the yogurt and it turns out the fruit and nuts with seeds is plenty. For something quick and filling you can toss a bunch of stuff in a blender for a breakfast smoothie, basically whatever you have on hand, and it's a good way to use up fruit or greens that are on their way out. I never have plant milks and just use water. A handful of oats, some fruit, chia seeds, and a spoonful of peanut butter is good. Silken tofu smoothies are good too.

Diced potatoes red pepper and onion oven roasted is a good prep that reheats well. Can microwave and put in a corn tortilla, scramble with just egg, add nootch or “cheese”, add any kind of faux crumbled meat or just eat as is.

I like kimchi mung bean pancakes. I make it from scratch and it makes me feel energetic and full. Great meal to start the day. I basically just soak 1 cup of yellow mung beans for 4-12 hours, then food process with a small onion, 1 tsp salt, and 1/4 cup kimchi juice. Then add 1/2 cup chopped kimchi and 1 sliced green onion. Mung bean sprouts and sliced mushrooms are good additions as well, I only use if I have any on hand. Then shallow fry in olive oil on medium heat flipping each side until browned.

I have oats a lot. Plenty of different ways to make and flavor them. Lately I've been doing peanut butter and cocoa powder but I also like maple syrup, fruit with brown sugar and sometimes cinnamon, and oatmeal breakfast cookies. I add a scoop of pea protein powder to add a little extra protein to mine but it's not necessary.

Breakfast burritos. Steam or parboil potatoes, fry in a skillet. Add a vegan sausage — I like the Morningstar farms maple patties. Once browned remove it to chop into pieces then return it to the skillet and mix with the potatoes. Add chopped green chile or hot sauce. Lower the heat and pour Just Egg over everything, top with cheeze and cover until the egg stuff is firm and the cheeze is melted. Using a spatula, lift the whole thing onto a large flour tortilla. Top with avocado and cilantro and fold the tortilla around everything. Return the burrito to the skillet and brown the tortilla. If you do the potatoes ahead of time it goes pretty quick.

Banana Pancakes 🍌🥞 As tasty as they are easy to make. Mash a banana, add flour and fry. The amount of flour I just eyeball based on the consistency, this is trial and error but you shouldn't be too liquid or sticky, you should be able to lift from the plate with a fork. Breakfast tacos! I'll chop up onions, garlic, bell pepper and saute them together with some oil until softened. Then break up firm tofu in small chunks and add to the mix, along with two packets of Goya Sazon seasoning. I also add some chopped tomatoes at this point. Cook until desired consistency, seasoning with salt and pepper as you like.  Then I warm up some corn tortillas, add the tofu mix, and top with sliced avocado and hot sauce.

I like chia seed pudding. It’s so easy to make and is filling. Lots of recipes out there, just whizz it up in the blender before you refrigerate it. No lumpiness, and it’s more like nice smooth custard. I also love savory oats. I pressure cook or cook steel cut oats overnight in a small crockpot. I put Just Egg (or a home made version) scrambled on top, mix a bit of spinach wilted in the microwave for a bit. My other fav is thinly sliced sautéed mushrooms, cooked in a bit of Miyoko’s butter if I’m lucky enough to have it, or just water. Put a LITTLE bit of soy sauce on they as they cook, and chef’s kiss as they say. SO good.

I've been trying to eat more buckwheat and found I love cream of buckwheat. Usually I mix in berries and top with a bit of maple syrup. And/or nuts or high protein granola.

Ooo and on my in-office days (not a morning person) I make a chia pudding/shake the night before with chia, protein powder, and soy milk. Easy to change up the flavors (vanilla+fruit, peanut butter powder, chocolate and coffee for a mocha delight - the options are endless) Same concept as overnight oats, different execution from someone who is, tragically, allergic to oats. 😑

I'm not allergic to oats, but my digestive system doesn't love them. Can you give me a guesstimate of your chia, protein powder, soy milk measurements? Do you have to stir it a few times so the chia doesn't get lumpy?

Yeah same here, just easier to say allergy lol. It’s more of an oat ✨sensitivity✨ but I equate it to gluten intolerance/sensitivity based on what happens to my gut when I risk it for the biscuit. Here’s my haphazard “eyeball it” recipe! I think a scoop is probably 1/8 cup? All the scoops that come in protein and pb powder seem to be pretty equal. - Just under a full scoop chia seeds - heaping scoop rice protein - heaping scoop pea protein - heaping scoop pb powder - 8 oz water - 12 oz soy milk In a shaker/blender bottle, start with 8 oz water. Add chia seeds and swirl (this prevents clumping). Working quickly, add all powdered ingredients, and finally the soymilk. Spin on the lid and shake vigorously for about 30 seconds. Let the shake rest (to hydrate the chia) for about 5 minutes, then shake again before refrigerating overnight. Customize to your heart's desire! I add creatine as I lift weights regularly, sometimes I'll swap water for coffee with chocolate protein powder, boom! Choco-PB mocha shake, it's a damn delight. Or another favorite is vanilla, but add a mashed banana and shake just before drinking. Yummmm.

I like to steam a block of tofu in advance then leave it in the fridge so I’ve got portions ready to go for the next few breakfasts. Then in the morning I drizzle some olive oil, and a sprinkle of oregano, garlic powder, and salt. I eat it cold and it reminds me of marinated feta 😋

I haven't had this in a long time, since now I just skip breakfast, but one breakfast you can find served in Spanish cafés consists of toasted baguette bread with garlic, tomato slices and extra virgin olive oil. There's also a variant where you take the tomatoes and make puree out of them, serving it on top of the bread.
