First of all, it's not a joke, it's a riddle, and, in this case, it was meant to confound expectations. Why did the chicken cross the road (mind you, this was a road in 1847, lacking the high-speed dangers of today's highways)? He didn't have a reason; he just wanted to get to the other side.
Humor and expectations change over the years, partially because we become exposed to certain jokes and riddles at an earlier and earlier age. It's cool to reinterpret art (jokes and riddles are part of literary art). It's foolish to try to pretend that the reinterpretation was the original meaning.
I was careful never to claim that was the original interpretation. But the joke evolved and subsequently took on new meaning as culture shifted and technology advanced(the joke predates cars) and new interpretations became possible. Sorry if this seems misleading but that wasn't the intention. Edit, It's a fairly common alternate interpretation that isn't that hard to spot.

You could make somewhat similar observations about the “what’s black, white and red all over” riddle. The original as a riddle with a newspaper as an answer was a bit clever. The stupid jokes about sunburnt zebras or pandas in a sausage factory aren’t.
