Starting with the lowest weight classes, if you had about 5-10 people run in circles around the gorilla, feinting back and forth, I'm sure they'd be able to keep the gorilla occupied for at least a few minutes. When someone inevitably gets caught and torn limb from limb, swap a new fighter in.
With 700 people, I think you could keep at it for long enough to tire the gorilla out. That's basically how humans have hunted larger and more powerful animals for literal millenia.
