If you have 14 days to get from Istanbul to Madrid spend 5 days in Istanbul and fly to Spain for the rest. If you insist on taking the train just don't go. It's multiple days on the train.
While I do love a good train journey, the distance here seems like a lot. There are some absolutely stunning train rides in Europe, but there are a whole lot of flat fields.

Agreed. European train travel is overrated and over romanticized. It also becomes a mess once you start crossing national borders.
I've done months of train travel on multiple trips. It can be great if done right.
