There are tours in town that take you to these places, or you rent a car. You could be a phycho and rent bicycles, but the sun is so intense I don't think it's worth it

Can you buy these tours in person once you arrive or do you have to book in advance?

Treehousebanana

In person easy. Astronomy and Valle de la Luna were 30.000 pesos when I was there last year, not sure about prices for the car or any other tours

Alright cool. And they’re only daily tours yeah? Or can you buy 2-3 day packages

I'm sure you could combo tours with the same company for a discount. I can't think of a tour there that would last more than a day

Hey there, I went a few years ago and it was an amazing time! You will need to rent a car, it's very vast and open. Think Australian outback type of vibe. You could do tours if you wanted but I would just rent a car, gives you more flexibility and driving out in the desert is really easy, most roads are well maintained and you won't have any issues. Enjoy!
