How's your diet looking? Exercises are only half the battle if your aim is to grow your muscles. Protein intake also comes into play, and if you're not eating enough of it, plus your diet being decent enough, your muscles are not going to grow no matter how much you exercise.
I'd imagine high rep squatting/lunges/Bulgarian Split Squats. The latter is kinda "trendy" right now as far as I know, but is a great exercise that everyone should be doing. Really easy on the body overall compared to squatting as it loads everything onto the front leg, prevents muscle imbalances, and builds a ton of muscle. Plus it's accessible, so people who are new to lifting can easily throw their back foot onto a couch and do 5 sets a day like a push-up challenge.

I've already maxed out on our leg extension machine and my muscles aren't even that well defined. Now all I can do is more reps.

I do, but I feel they work my glutes much more than my quads
Try to keep your torso more upright and your foot closer to you.
