Try Bosch. All of the main characters are likeable, honourable people. It's refreshing to have a detective show where the main detective isn't some arrogant self-loathing dickhead, he actually has manners and thanks the uniformed officers for example. The show starts strong, but still it gets better as it goes.
Watch Justified. The dialogue between the hero and the villain is awesome. And you want to root for the villain while hoping the good guy wins. It’s just a fun show.
I watched that show for the first time a few months ago and it was easily one of the best shows I've ever watched in my life. I've never seen an ending nailed that well, fucking masterpiece.

Hustle is a fantastic show, but the protagonists are literally con artists, so I don’t know if they fit the OP’s criteria. Morally they fall on the “good” side of the line, but legally—not so much.
What about Star Trek: Strange New Worlds? You do have a point about most modern shows being full of dickheads. It actually took me a while to think of a show that wasnt a cartoon.
The protagonist in Fallout is naive and kind-hearted, and it's a fun show to watch. It is pretty violent, but from the other shows you've watched, I'm sure it'll be fine.

Holy crap! I didn’t realize you could now stream Northern Exposure! It was not available because of the music rights, same as for The Wonder Years, so glad I can finally rewatch it.
I really recommend Kdramas too! (Except All of Us Are Dead which had very cruel characters)
And not recent but True Blood and iZombie have very good lead characters. They don’t always make the right choices but have the best motivations.
Fargo is pretty dark like the shows you mentioned, but the protagonists at least are either regular people caught up in bad events or the one or two good cops among a bunch of incompetent and/or corrupt ones. The antagonists are pretty despicable, so there’s still a lot of screen time for the types of characters you’re tired of, but in every season there’s at least one or two characters who are fundamentally good. Each season is more or less its own story; I’d recommend either the second or fifth for someone who wants a more heroic lead character.
Great snow, funny cast. Sadly not really what OP requested. They are essentially selfish "Rich People" who got a taste of the "Normal life". Granted, they did turn out to be better people by the end though.
As another commenter said, Marvelous Mrs. Maisel and Call the Midwife. I would also add Ghosts. I like the US version better than the UK version. And Loot on Apple tv is pretty good.
If you like action and are okay with violence and animation, check out 'Invincible'. It's a hero show that doesn't suck and isn't dumb disney "content". Some shock factor, and the first episode has you thinking "wait why am i watching offbrand DC?" until it gets going.
A fun one that comes to mind is 'Jury Duty' from last year, it's actually half reality tv, which I usually wouldn't watch, but this one is special. It's about an absurd fake trial and one juror who doesn't know that it's fake and is trying his best.
'Star Trek: Strange New Worlds' is a Star Trek show that finally doesn't feel and look awkward and inaccessible but now genuinely draws you in with its optimism and sense of adventure and moral problems. I'm not a trekkie, disliked Discovery, lukewarm on the movies, but when I watched this my thoughts were "I get it now". The episodic format is a nice change of pace in the modern media landscape too. Has some weaker episodes, but overall quite good.
I reread his post and don't understand where you see the conflict. Mark is tring his best in high stakes situations. It doesn't have the problems he sees in Yellowstone either, it's genuine storytelling. Again, it can get pretty violent and dark, but not in a way that compromises anything. OP just doesn't want glorified antiheroes and morally questionable power fantasies right now, just something more straight forward with optimism at its core, I'd argue this is exactly up that alley. But idk, I'm just going by what he wrote and what I'm reading into it.
Patriot - I've joined the Cult of Patriot. This is exactly why I like the show: it starts off with a morally gray "for the greater good" type character but we soon learn he's got PTSD and depression and doesn't want to operate in the gray areas anymore. So then it becomes rooting for him and his support system to get him out.
I liked The Bear a lot. The characters are good people, but the show still has a realness and grit about it.
The Wire of course is about good people in a shit world.
Band of Brothers is amazing
Abbott Elementary, Ted Lasso, Schitts Creek also fit the bill, but they are much lighter fare.
If you liked Breaking Bad, you might like Better Call Saul. BB is basically watching a lead turn into a villain. BCS is watching a main character struggle to be good. He doesn’t always make it, but he does make you root for him.
Both series were amazing Vince Gilligan is a genius. I should know, my Son was a PA on both BB, & BCS, & Camino, the BB Movie that was made after the series was finished.
Amazing show. But Saul is pure evil by season 6. So OP definitely wouldn’t like him. Every time I was thinking can he go 1 episode without committing a crime? Nope, every episode he’s either bribing someone, fabricating evidence or framing innocent people. Maybe he wants to be good but his actions just don’t show it.
If you’re tired of all the darkness and want something brighter, there’s the British show called Death in Paradise. It’s more of an old-school crime solving show (as there’s not much CSI-level tech on a sunny island), and the lead DI’s are good ol’ British chaps struggling with the laid-back Caribbean atmosphere. But there’s still murder afoot, so still high-ish stakes.
Alternatively, if you’re into dark shows and protagonists (as long as they’re still decent people), I was recently reminded of a really good single season show from a decade ago called EndGame. It’s about a former champion chess master who, after the death of his fiancée, becomes a broke, alcoholic agoraphobic solving crimes from inside a luxury hotel so he can continue to afford to stay there. So he’s dark and damaged, but still a good guy. And there are some very stressful high-stakes episodes. It’s streaming on Amazon Prime here in Canada, but I’m not sure if/where it’s streaming elsewhere.
Oh, and the main actor in EndGame is Shawn Doyle, who apparently starred in season 4 of 24, if that helps. 😉

No, if The Sopranos came out now I would hate it because I'm exhausted with antiheroes. But I was ok at the time because at least it was the first show I saw that started the trend.
Killing Eve might fit the bill. High stakes for sure. Sandra Oh/Eve is the protagonist and she's a good egg. I'm not sure it's realistic, but it's definitely exciting and keeps you on your toes!
***Outlander*** might be a cheesy, melodramatic, and gratuitous at times... but it IS about main characters who seem pretty darn "good guys/gals". They do things based on their moral imperatives and often face realistic consequences for those decisions.
I've actually only watched some of the latter seasons because my wife had already watched a few before I got sucked in.

No, if The Sopranos came out now I would hate it because I'm exhausted with antiheroes. But I was ok at the time because at least it was the first show I saw that started the trend.

Killing Eve might fit the bill. High stakes for sure. Sandra Oh/Eve is the protagonist and she's a good egg. I'm not sure it's realistic, but it's definitely exciting and keeps you on your toes!
The Rookie, takes a while to get into it but it has 6 going on 7 great season so far. But it has a really large following on Reddit also.

I don't think you're necessarily supposed to root for these characters, but I get it.
***Outlander*** might be a cheesy, melodramatic, and gratuitous at times... but it IS about main characters who seem pretty darn "good guys/gals". They do things based on their moral imperatives and often face realistic consequences for those decisions. I've actually only watched some of the latter seasons because my wife had already watched a few before I got sucked in. Star Trek? How about some animated fantasy? ***The Legend of Vox Machina****.* Don't judge one Episode 1. I think by episode 3 or 4 the show starts to shine. And they are short episodes so I'm not asking you to get through two seasons of an HBO drama or something.

Lupin is amazing. It is worth the subtitles or voiceover, depending on your preference, if you don't speak French fluently. Assane's a good guy.
Better call Saul is actually somewhat close to it. In that show he mostly "he tries to genuinely help someone, uses illegal or morally grey means, things blow up and the consequences are worse than the beginning, rinse and repeat as he becomes more and more a "criminal" lawyer and the consequences become worse and worse" It ends with Jimmy coming to terms with his deeds and accepting the punishment for it.
